Meringue Kisses I
Meringue drops/kisses are really good. You need some knack in the baking process to get the flaky, non-sticky kisses. But, even a goof is very edible but not really presentable to company as they will likely be sticky and be chewy (like gum). Of course, my son like the chewy ones best. I followed this basic recipe but omitted the chocolate and used 1/2 sugar and 1/2 Splenda. I ground the sugar in a food processor to reduce the crystal size. For some I used a vanilla and almond extract mix and in another batch I used peppermint extract.

Eggplant Supper Soup
Yummy! I wanted to use an eggplant in a different way than usual and found this recipe. I largely followed the directions but used more celery and carrots than called for and I added a heap of ground fennel which is one of my favorite spices. I did not add parsley or paremsan since I did not have these on hand. I was not going to add a pasta noodle but decided to break a small amount of spaghetti into 1/2 to 1 inch lengths. Tasted great!

Spinach Brownies
I loved this recipe! Delicious! I had a bunch of fresh spinach that needed used and this recipe seemed to fit the bill. It was quick and easy to make and came out wonderfully. My 6-year old son ate some begrudgingly which was OK with me since he often refuses such things. I used less butter than called for and used a combo of about 6 oz of feta and mozzarella with some feta sprinkled on top. I was using up a 4 lb bag of spinach and assume I used closer to 20 oz than 10. The recipe can certainly stand more than 10oz of spinach.
