Grilled Fish Steaks
This is a great marinade! We are trying it again tonight because we liked it so well the first time. Very easy to make. I like that it is a one hour marinade. Long enough to flavor the fish but not overwelm it.

Caribbean-Spiced Roast Chicken
My husband and I have tried this one twice now and it was good both times. We did it on the bbq rotissere! It came out nice and moist with a sweet flavor from the cinamon which blends well with the lime and dry rub. I would have to say that you probably could tone down the rum to your liking because it can be a little strong. You could increase the lime and/or cinnamon. It's easy to throw together.

Caramelized French Toast
I made this for my husband for father's day and we loved it. The carmelizing was a little off for me too. You have to control the tempurature. Next time I make it I will take the other advice of boiling the water first. I should've read the reviews first. I might want to add cinamon and vanilla next time. The Brown sugar takes the place of maple syrup and you can sprinkle with powdered sugar. Yum! Still a good recipe.
