Slow Cooker Marmalade Curry Chicken

I liked the flavor of this, but I found myself wishing the sauce was a little thicker. I served it over brown rice and would have liked it more if it had clung some to the rice. Nevertheless, it's a good dish, and easy to prepare.

Irish Soda Farls

My dough was really soft, even after I added some additional flour, so instead of rolling it out and cutting it, I just dropped blobs of it on the griddle. I found my heat needed to be medium high in order to get them to brown properly. Nevertheless, I enjoyed them with some butter and jam. I'm not sure I would make them regularly, but they were a nice St. Patrick's Day treat.

Ground Beef 'n' Biscuits

This is a pretty good basic ground beef dinner. I had planned to use peas as suggested, but found I didn't have enough and had to add mixed vegetables, and that was fine. I would have liked the oregano flavor to be stronger. I didn't have refrigerator biscuits and made mine from scratch, adding the cheese halfway through the baking.

Pork Tenderloin with Creamy Herb Sauce

This is one of the best recipes I've ever tried from AR, and at this point I've eaten over 300 of them! It's a company-worthy dish that is very easy to prepare. I planned to make it exactly as written, but in the middle of preparation I discovered I had no basil (HOW did that happen???) and I substituted Italian Seasoning. I liked the result so well I will probably go that route in the future. I served it over penne, and next time I would definitely double the sauce. This is outstanding, and I highly recommend it.

Pesto Scrambled Eggs

I used some leftover feta cheese and was delighted at the flavorful result. Others have mentioned variations they've done, and I can see this recipe as a jumping off place for a lot of combinations. The pesto is the key, and if you really like pesto you could add even more.

Army SOS Creamed Ground Beef

This was surprisingly good. On the advice of others I kicked it up a little with a generous amount of Worcestershire sauce, some onion, and a good bit of coarse black pepper. I think I will be returning to it for a quick weeknight dinner.

Saltine Toffee Cookies

I needed a sweet treat to take to a gathering and didn't have much time to make anything. This was the solution since it doesn't take long and is made with things that are usually around. I did have some problems breaking it apart and wound up with a lot of useless little pieces, but what I could use tasted great. You should probably press the nuts into the chocolate too, because a lot of mine came off as I was breaking it apart.

Chantal's New York Cheesecake

This was the first cheesecake I ever baked, and everyone who ate it loved it. I was pleased that there were no cracks, but I did use a water bath. I had the same issue as Ali where I had some small lumps of vanilla and flour that I couldn't get rid of. It was an appearance issue rather than a texture or taste one. Add the vanilla, then add the flour slowly. I served it was some strawberry coulis.

It's always hard to make a recipe for something you've never eaten or even seen, since you're really not sure what you're aiming at. I never heard of Bobotie until I saw this recipe, and the mix of ingredients intrigued me so I took the plunge. It smells wonderful when baking. The first bite was a little strange, but as I continued to eat it the taste began to grow on me and I can honestly say I liked it. (My husband thought it was only okay). My only fault was with the sauce. Some have described it as "custard" but mine turned out more like scrambled eggs. If I were to make this again, I think I would add a little more chutney. If you're looking for something unusual, this is worth a try.

I never heard of migas until I was browsing the egg recipes. A friend suggested frying the tortillas first so there would be some crunchiness in the eggs, which is what I did. If you do that, wait until the eggs are partially set to add them or they will lose their crispness. I can see lots of room for variation in the ingredients added to this and I will try some others at a future time.

Although it was something different to do with fish, overall I thought it was just okay. I would have preferred a thicker sauce that clung to the fish a bit. I served the extra sauce over brown rice.

Rosemary Pork Roast

So good! I used fresh rosemary and the meat was so tender and full of flavor. A word of caution though; if you use a tenderloin the cooking time is far too long. Mine was ready in less than an hour. I added a little water to the pan after the meat was done and served the juice over the meat. This is a great and easy way to make a delicious pork roast.

These were so good! I had rose wine and used that. I probably used less onion and more butter than the recipe called for, and I added some salt and pepper before baking them. Definitely a make-again!

Apricot and White Chip Cookies with Almonds

They're good cookies with nice texture, but I think they're too sweet even though I cut back on the white chocolate chips. They have some crispness when they're first baked, but then become soft because of the apricots in them. I didn't like them as much after the first day simply because I prefer a crisper cookie.

Peppermint Cookies

These are a great Christmas cookie. I have several suggestions to make it easier to make them. First of all, make sure the pieces of candy are fairly small. I had a few bigger pieces, and these were the ones that "leaked" out of the cookies and made a little mess. Second, after you form the rolls, wrap them in plastic wrap and freeze them. They then are easy to slice and they keep their shape better. Slice them with the plastic wrap on then just peel it off each slice. Finally, use parchment paper on the cookie sheets. The cookies came off easily, and any mess from melted peppermint can just be flicked off the paper and it can be used again for another tray. I considered dipping one half in chocolate and then more crushed candy as others have suggested, but I decided they looked fine as they were with all the pink specks from the candy.
