I really enjoyed this. I made a few changes out of necessity: added a whole avocado because I had one on hand and didn't want it to go bad. Used 1C Light Sour Cream + 2C Fage Total (fat free) greek yogurt. That's what I had in the house. Thanks for the recipe! I will certainly make it again!

My husband hates sweet potatoes. We get our veggies farm direct and they came with our order, so I didn't have a choice but to make them and he agreed to try what I made. I was VERY VERY happy with how these turned out. No butter we used light sour cream and a indian curry mix when frying up the onions. My husband loved them and even took seconds. This is the 1st review I have ever written up for ANYTHING. I really just wanted to say thank you! Healthy and the best sweet potatoes I have ever had - I will be making these again!!
