I'm from Alaska, lived in Mexico for a year after getting married, was in Lima for 2 years and now we're settled in Cusco for the long run. I love it here! We're planning on opening a cafe at some point so I'm trying a lot of recipes for baked goods that we can use.
My favorite things to cook
I love to bake, especially chocolate treats and cookies. My new favorite is dark chocolate cheesecake. I like to cook with chicken and vegetables, make Mexican dishes and soups. We love cumin, garlic, cilantro, chile and ginger in our house!
My favorite family cooking traditions
Chocolate chip cookies... everyone in my family had to learn to make them the "right" way and now we're all very picky about them. Being from Alaska, there is always Alaskan blueberry pie or cake at any get-together.
My cooking triumphs
Finding the perfect brownie recipe and perfecting my cheesecake. It's hard to find real cheesecake where I live so that is a huge triumph!
My cooking tragedies
I decided to try a healthy recipe I found once for sweet zucchini carrot pancakes. Big mistake! My husband says they were worse than his mom's apple beet muffins, a huge joke in his family.

Soft Chocolate Cookies
Absolutely delish! My husband begs for me to make them every day. I added some dark chocolate chunks and they taste just like brownies when not over-baked.

To Die For Blueberry Muffins
I gave this recipe 5 stars because I loved the muffin part and topping! I didn't actually eat more than one muffin because I used dried blueberries as that is all I can get here in South America (someone sent them) and I decided I'm not a fan. But with fresh Alaskan blueberries I can imagine these would be the best ever :) I don't think the recipe needs any tweaking, except to maybe half the topping if you're making oversized muffins. Also, to those who mentioned the topping made a huge mess, I think brown sugar may melt more readily than white sugar. I used white sugar and it stayed right in place, but with brown sugar on something else I made it melted right away. Just a guess!
