About this Cook
I'm a busy mom to the cutest little boy, Landon. I live in upstate NY in the same town I grew up in. I live with my boyfriend and son in our new house, which we are working on making our own. I started cooking when I was quite young, probably 10, and by the time I was 12 was cooking dinner for the family. Someone had to save us from rice a roni and chef boyardee! I love to try new things and have been known on more than one occassion to just throw stuff together and make it work. Hey= they make pizza delivery for a reason, right?!
My favorite things to cook
I bake to when I'm stressed, and when I'm cold ( nothing like a warm oven and the smell of tasty treats to warm you up!). I like to cook all sorts of things, Italian, mexican, grilling, and let's not forget the all important "man-food" category!
My favorite family cooking traditions
Thanksgiving, and making my grandma's pie crust from scratch. Fall is my favorite- the air is crisp and all I want is apple pie.

Chicken Enchiladas II
Great basic recipe! I used leftover roasted chicken, and added some jalepeno slices for a little extra kick!

Blueberry Sour Cream Coffee Cake
Very good! Sweet, but still delicous! I didn't make the strudel mix and just drizzled some lemon frosting (lemon juice and confectioners sugar) over the top- that helped cut the sweetness and enhanced the taste of the blueberries! Yum!

Sugar Cookie Icing
Tasty and dried great! However- you need to add a lot more powdered sugar to get to a "pipe-able" consistency. Also- like others said- the 2 tsp is a typo- it's definitely 2 tbsp! I also used vanilla extract instead of almond, but that's a personal preference and doesn't effect the icings consistency. Will definitely keep this in my recipe box!
