No Crust Pumpkin Pie
It was OK...a nice alternative to a not eating a fatty crust. Everyone liked it, but not a fan favorte. Sprinkled toasted pecans on top for some added crunch.

Roasted Beets and Sauteed Beet Greens
Did just the beets - not the greens. Really turned out sweet and yummy. Slice and put on spinach salad with feta. A great way to get some additional vitamins and iron.

German Spaetzle Dumplings
Very good and pretty easy, too! Used a spaetzle maker (you can pick one up at Williams/Sonoma or eBay). A family winner - will make again and double the recipe. Sprinkled some parmesan cheese on top - yum!
