Portobello Penne Pasta Casserole
This was fantastic! I veganized, using soy milk and cheese and bragg's instead of soy sauce. I ended up using all the cheese in the sauce and sprinkling some diced tomatoes on top. The cheese sauce is great, but I will experiment next time with different spices and possibly wine for some added depth.

White Bean Chicken Chili
Really hearty and lots of flavor! I made a double batch for my daughter's birthday party and everyone loved it. Served with sides of sweet cornbread, salad, and grilled cheese. Made in the crockpot and subbed green salsa for tomatillos. I only used one can of chicken broth (for the double batch), and chili was still runny so I thickened it up with cornstarch and water. Thanks for the recipe - it was exactly what I wanted!!!

Green Salad with Cranberry Vinaigrette
Review of dressing only... Great dressing! It does taste extremely tart on its own, but tones down a lot when paired with the right salad. No additional sugar necessary! I made a baby green salad with gorgonzola, craisins, walnuts, red onion, and chicken. On a side note, this does thicken considerably in the fridge - use within a few hours of making, or add some water to thin.
