Seven Layer Tortilla Pie

This was really simple and I had all the ingredients on hand. However I chose to use some vegetarian jalapeno refried beans. Thanks for the recipe it's great! A bit messy though. :)

Olive and Feta Pasta

This was great and easy to make- i hardly took any time at all. I used regular fresh mushrooms and adjusted the recipe for 6 people. I'm not a big zucchini eater, but I really liked it in this dish! Even my picky little sister ate this.

These were great! A really nice alternative to the normal meaty, messy Joe. I used red onion. The scooped out kaiser bread made a great bread pudding.

Yum, the whole family loved this! It was really simple. I used 2 eggs worth of refrigerated egg subsitute which seemed to work fine. The is a keeper!

Fast and Friendly Meatballs

These were great, but I think that maybe they need a little something- dried herbs maybe. They also may taste better with darker meat- I used breast meat. Still we loved these. We ate them in a garden blend spaghetti sauce on fettuccine. I used the leftovers for meatball sandwiches- yum!

Extra Easy Hummus

This is a great basis for a hummus recipe. From this I sometimes put in cilantro or green onion. Sesame seeds or sesame seed oil are nice additions, as are red pepper and lemon juice. If you use sesame seed oil or lemon juice, leave out the olive oil.

Marmalade Pork Chops

This also works in the frying pan. Brown the chops, then pour the sauce over, cover and simmer for 6-10 minutes. Another really good addition is a little sesame oil and rice vinegar. Thanks for the recipe it was so simple and tasty!

Fry Sauce

It makes me laugh that people are so mystified by fry sauce. When we first moved here I had no idea what it was either, but now I see it everywhere. Simple recipe, but really good. A little lemon juice is a nice addition.

Summer Bean Salad I

Very good! It has a strong vinegar flavor, so I might cut back on that next time. I'm rating it five stars because I didn't follow the recipe exactly. I had to use canned tomatoes with green chilies and cilantro. I had no fresh tomatoes, bell peppers, green onions, or cilantro. Our pantry was running low, and this was the best recipe I could find for what we had. I'd like to try it with fresh ingredients next time, but it was still very good!

There are lots of things that could be layered onto these. We loved Pepper Jack cheese and jalapenos for a kick. This is a great, versatile recipe, and a great meal to throw together in a hurry.

German Lasagna

This was a really fun recipe to try out! I think it's a keeper- the whole family loved it. The sauerkraut taste isn't very strong, and the canned soup doesn't have a "canned" flavor. I put it in for 10 minutes longer, adding the cheese for the last 5 minutes. Thanks for this recipe!

Kielbasa and Kidney Beans

My mom and I have made this many times, and each time we change it a little bit. Sometimes we add some cooked penne, tomatoes, fennel seed, tomato sauce, etc., leaving out other ingredients (such as the Worcestershire). It's a really adaptable recipe and it's fun to make!

BBQ Chicken Calzones

The whole family raved about this one! I made my own pizza dough. I didn't have quite enough chicken and didn't have any bacon, so I added some diced up turkey pastrami. I didn't have any cilantro and I chose to mix all of the BBQ sauce into the chicken mixture. This recipe is really adaptable- I love it. There's no doubt that I'll make this again!!

Loved these! I made them quite some time ago and am just rating them now, but I can still remember how great these tasted! I didn't change anything in the recipe- I'll have to make these again. I bet artichoke hearts would taste really good in some sort of variation.

Clark Gable Pancakes

These were great, fluffy pancakes! I substituted applesauce in place of oil- I always do in pancake recipes. I also added a little bit of vanilla to the milk mixture. This made exactly 10 pancakes using 1/4 c of batter for each. Thanks I'm definitely making these again!
