About this Cook
I'm a stay at home mom that loves to try new recipes or come up with my own.
My favorite things to cook
Desserts hands down. It's just too bad I like to taste them as well
My favorite family cooking traditions
Making tamales with my mom and sister in AZ.
My cooking tragedies
Canning. I just recently tried canning and I ended up blowing the air vent off during the process. No one was hurt but the seals on the jars were blown off. None of the glass was broken, just my ego. Nevertheless, I haven't tried canning since.

Apple Pinwheels
Recipe tastes good. A couple hints to prevent the mess others were complaining about. 1) Place dough on wax paper that's been sprinkled with flour and use wax paper to help roll it up. 2) You can use 3 apples, but you really only need a little more than two cups of finely chopped apples. Strain before using (excess liquid = difficult to work with). Just add enough apple mix until the dough is evenly covered but not over done. Also, you don't need to add all of the sauce as well. Personally next time I make this treat, I am using less sugar. Probably 1/4 white and 1/4 brown sugar in the sauce mixture. They are really sweet.

Portobello Mushroom Stroganoff
YUMMY! If you're not a vegetarian, you won't miss the meat. Our family is not vegetarian, but thought it would be good to incorporate one meatless dish a week. I added: 1 tbsp of yellow mustard to the sour cream mixture and substituted dried parsley flakes instead of fresh. I also added 1/4 cup of white wine at the end. I should have decreased the sour cream by at least 1/2 cup, next time I will. There was a lot of sauce left over. I did the egg noodles but also added 3-cheese filled tortellini for more substance. You can find that in the refrigerated section.

Baked Pesto Chicken
Delicious! I marinated (after the suggestions of others) for about an hour or so. I added a sprinkle of parmesean on top of the cheese. For a side dish I heated up a bag of mixed veggies, tossed it with some olive oil and some cooked penne pasta, garlic powder, and more parmesean cheese. BOTH were outstanding and extremely EASY to do.
