Vegan Chocolate Cake
This cake is delicious, especially for a vegan recipe. It gets five stars because it is very good and vegan. There are other cake recipes I like better, but they are not vegan. The second time I made this recipe I added an extra 1/4 cup cocoa, about 1/2 cup chocolate chips and 1/2 cup chopped walnuts. We like this much better.

Turkey Brine
Superb! I followed the recipe exactly the first time. The turkey was delicious and very moist! Modifications we have tried: ---Add 1 tablespoon juniper berries. ---Add zest from one orange, 1/2 cup dried cranberries and 1 teaspoon juniper berries. ---Use chicken broth and double the rosemary, and add lemon zest. ----Add 1 teaspoon dried lavendar. ----Add 2 teaspoons garlic powder, 1 teaspoon peppercorns and zest from one lemon. Each of these combinations was wonderful. The amount of salt and water seems to be perfect to push the moisture and flavors into the meat. I have used this brine for turkey, chicken and pork, and have found it to be easy and delicious each time.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce
Divine! I served this for Easter Sunday dinner. I prepared each set of ingredients Saturday and set them aside for easy prep on Sunday. It took some time to chop and measure all the ingredients, but it is worth it!!! My family wanted to rate this as a 10, even though they know the highest rating is 5. I will try this recipe with pork and possibly chicken, since we cannot afford leg of lamb very often.
