Banana Crumb Muffins

Melt in your mouth muffins. These have a cake-like texture. My bananas were almost black but they worked great. Followed the recipe exactly except I accidently made 9 big muffins instead of 10. Also cooked them too long so they were a dark brown on top but they tasted fantastic. The recipe is solid as written. Next time I might add some pecans or walnuts.

Kettle Corn

This is addictive! It is so easy and cheap to make and we love it. Use the 3 kernal test for your oil and use a little salt. My 11 year old wants it everyday and she thinks it's great that something so tasty comes from 4 wholesome ingredients.

Thai Chicken Bites With Dipping Sauce

This recipe is fantastic. I had to make the peanut sauce from a recipe on this site. We eat as a meal with white rice and a veggie. For toppings, try a serving plate with lime wedges, chopped peanuts and cilantro instead of the green onions. Great flavors and an easy cooking technique with better than restaurant results.

Simple Scones

English Royalty Chocolate Chip Scones

Try the Simple Scones recipe from this web site and substitute mini-choc-chips for the raisins. It's much better and does not require changes to the recipe. To make this one easier, just cut into wedges and bake in a pie shape.

Chicken Fried Chicken

This is an easy and inexpensive recipe. I used chicken tenderloins instead of chicken breasts which reduced the cooking time to about 5 minutes. Just for ease, I used 2 eggs instead of 1 egg. Next time I'll double the dry ingredients too. The kids thought these were the fanciest chicken fingers ever. I'll definitely make this recipe again.

Lemon-Lime Chicken Broil

This was too sour for my taste but my 14 year old loved it. Be careful with the hot water in the pan as it can slosh out when basting the chicken. I would add some honey to the sauce if I made it again.
