Chilled Cucumber Yogurt Soup

I love this soup! It's easy to modify but great as is. I sometimes add celery, avocado and a tablespoon or 2 of ranch dressing. I also like 1/4 teaspoon of chipotle seasoning in it as well. I've made this almost weekly for months so it's safe to say, it's now a 'staple' in my diet!

Blueberry Cream Muffins

This is a really good base recipe. I used whole wheat flour, applesauce instead of oil and half white sugar-half turbinado sugar. They were sweet enough for me and didn't need more sugar. I also added extra blueberries, as others have suggested. Will make these again.

Pistachio Mallow Salad

Very easy and really good! I used 1 cup whipped whipping cream instead of coolwhip and it wasn't too sweet at all. Will make again.

Whole Wheat Sweet Potato Muffins

These muffins were quite good. Perhaps the potato I used was a bit small because I didn't get a lot of sweet potato flavour from these, but they were very moist and a good breakfast muffin. One small change - I added raisins (I like raisins).

Mushroom, Leek, Chicken Sausage and Tortellini Soup

This was very easy and turned out great! I made a couple of changes - 1 shallot instead of leeks and bratwurst (yes!) instead of chicken sausage (couldn't find any at the store). I used more mushrooms than recommended and cooked them a bit longer, until golden, which really enhanced the broth. As other reviewers have mentioned, add tabasco to your liking. Nice and simple and very tasty!

EAGLE BRAND® Quick Chocolate Mousse

This was super easy and very yummy! Use actual whipping cream (only takes a few minutes to whip) and not CoolWhip or it will be VERY sweet. The whipped cream gave it a very nice mousse texture too. A nice quick chocolate dessert!

Ham Cheddar Biscuits

I made these today and they were great! I took advice from other reviewers and added some butter to the batter and brushed melted butter on top when finished. I also added some pepper and dill to the batter. They were so yummy I ate three right out of the oven! Will definitely make again.

Beef Noodle Soup

Great soup but I made a few modifications. I used meatballs (ground beef, egg, parsley, bread crumbs) instead of stewing beef; added some worcestershire; reduced the water by about a cup and added a can of beef broth, eliminating the bouillon. Super easy and very yummy.

Family-Favorite Soup

This is quite tasty and it's pretty simple to make (definitely a plus for me!). I made this yesterday, and as with most soups, it's even better the next day. I made a few small changes - I used shallots instead of onion and sauted them before adding all the vegetables, and then added half the water. I also used a bit less total water (4 cups) plus 1 small can of beef broth instead of bouillon. I used herbed tomato sauce instead of tomato soup and I also added some worcestershire and some cilantro (I like cilantro) at the end. A yummy hamburger (but not too chili-like) soup.
