Solid recipe. Came out nice and flaky. Didn't knead a full two minutes at the suggestion of other reviewers. Only kneaded until the dough held together.

Libby's® Famous Pumpkin Pie

There is too much evaporated milk, resulting in way too much filling for a 9-inch deep dish crust. It also made it very watery and took much longer to cook than the recipe says. This may have something to do with my oven too. Next time, I would decrease the milk. The crust burned as well due to the extra time in the oven. Another reviewer suggests putting foil on the crust for part of the time, to prevent burning.

Blackened Chicken

I had to double the seasonings to have enough to cover the chicken. I also used chicken thighs which are more moist but fatty, but that's up to your preference. I'm not sure if my pieces were just too big but I needed about 20 minutes in the oven for the chicken to cook through.

Nice easy recipe for when you don't want to cook. Very creamy. I thought there was quite a lot of sauce, but the gravy would be good with mashed potatoes or something else.

White Chocolate Macadamia Nut Cookies IV

I used 1/2c of white chocolate chips and 1/2c of chopped macadamias, which was the perfect portions for me. This is a naturally rich and creamy cookie with the white chocolate and all, but I wouldn't try to change it.

Sangria! Sangria!

First time making Sangria. Was a hit at dinner. Doubled the recipe for 6 people and ran out halfway through. Should at least triple if you have some sangria lovers / heavy drinkers. Used half the brandy, and 3/4 of ginger ale (instead of carbonated water) called for. No lemon juice, used more frozen lemonade instead. No sugar.

Erin's Indonesian Chicken

Not sure if it was something I did, but the sauce was way too thick. Although it tasted okay, the texture was almost like eating chicken dipped in peanut butter. If I make it again, I would add more water, or heat the sauce for a much shorter period of time.

Blue Ribbon Mincemeat Pie Filling

Beside having to cut this down to 5 servings (which was more manageable), this was a pretty easy and tasty recipe. I know there is not always actual meat in mincemeat, but I liked the hearty taste of it myself. I think it helps to offset the super sugary fruit mix.

Buttery Corn Bread

Good recipe. I only used 2 cups flour and added 1/3 cup cornmeal. The dough will seem like a pretty flat layer in the pan, but it rises a lot.
