Buttery Corn Bread

Good recipe. I only used 2 cups flour and added 1/3 cup cornmeal. The dough will seem like a pretty flat layer in the pan, but it rises a lot.

Ultimate Twice Baked Potatoes

Delicious but way more time consuming than I expected. I also couldn't get the skins to be crispy enough; maybe I didn't scoop out enough and they were too thick? I also used ideas from the Baked Potato Skins recipe and brushed a mixture of olive oil, paprika, and garlic powder on the skins.

Brownie Biscotti

I didn't realize biscotti was so easy to make! I used more cocoa powder since I didn't have chocolate chips. I also tried this with dried blueberries. Not bad. I did have some issues with crumbling pieces, but it was manageable.

Raspberry Vinegar Chicken Breasts

I doubled the sauce except for the vinegar, which turned out well. It takes forever for the sauce to thicken, so I also used some cornstarch. Overall, it's an alright recipe.

Moist and delicious. I replaced half the oil with applesauce and used a little more than called for. Could add more zucchini and less sugar. If you're using regular size loaf pans, it makes two somewhat flat loaves.

It's true! The sour cream keeps this bread very moist. Note that the recipe is for mini-loafs and you definitely need to increase baking time to make a large loaf.

Very nice flavor but I would definitely cut back on the butter and vinegar. I also added carrots to give this dish some variety and it works out great.

Chewy Coconut Cookies

Delicious, chewy, buttery cookies. Definitely decadent, as I can tell by the greasiness on my fingers after eating one. Not too difficult to make. I was able to get 27 small cookies - you'd have to make mini ones to get 36 like the recipe says.

Simple Scones

These scones are ridiculously easy to make if you use a food processor. Toss in the dry ingredients, toss in your berries/zest/nuts/chocolate, toss in your liquids, and the machine does all the work. I like the look of round scones rather than cut triangles, so I just place the dough by big spoonfuls onto the baking sheet. Great, versatile recipe!

Pistachio White Chocolate Chip Cookies

These are amazing. Super buttery (as you can imagine reading that recipe). I love that the wheat flour and rolled oats in it - gives it a nice texture. The pistachio flavor doesn't really come out, however. I might try this with macadamias.

Pumpkin Casserole

The fact that one reviewer made this as pumpkin pie and another served it with chicken and broccoli indicates a case of mistaken (or rather confused) identity. The truth is that this recipe is quite versatile. I was going for side dish rather than dessert, so I only used 1/4 c brown sugar. I also replaced 1/4 c of the butter with 1/4 c applesauce to make it a bit healthier. Then I popped it in the oven while I prepared the rest of dinner - very easy! It came out moist and fluffy (warning: the fluffiness doesn't carry over to the next day), with just the right amount of sweetness to serve with dinner. For more of a dessert feel, I might use up to 1/2 c sugar - the pumpkin puree is sweet in itself. And you can top with marshmallows or whipped cream, yum!

Sizzling Sherry Shrimp with Garlic

A very quick and easy recipe. The paprika gives it such a nice aroma and you can adjust the pepper to your preferred level of spiciness. I used a bag of frozen mixed seafood for variety.

Good and healthy muffins. The strawberries sort of leaked and got gooey so the muffins are easier to handle after completely cooling. But of course, it's still worth it to eat one fresh out of the oven. =)

Cranberry Orange Loaf

Very moist and fluffy. Would be great with your coffee and probably much healthier than the pastries at Starbucks. I always halve the sugar because my mom is pre-diabetic, but I imagine this cake would not have been too sweet even with the entire cup of sugar. Besides, the cranberries can be pretty tart. This would be great for gifts or entertaining because it comes out a pretty color and looks decorative.

Grilled Lamb with Brown Sugar Glaze

Tried this rub with pork chops and used a broiler since I don't have a grill. Very flavorful - in fact, I found it a little too strong. I cut the recipe in half and cut the sugar down to 2 tbsp for 3 pork chops. Quick and easy. Would definitely make it again but maybe try out some minor adjustments.
