Cindy's Jambalaya

This is a wonderful jambalaya. You can add chicken or scallops, whatever you like. It makes quite a bit but it freezes well for a later meal. Hope you enjoy it as much as we do!!

Crusty Potato Bread

I've made this recipe several times now and it's always so yummy. I've made a loaf and baked in the oven and even cut into 15 rolls and baked in a 9x13 pan for fantastic rolls. Used these for my Christmas dinner. I thought I'd reviewed it before but I guess I had missed this one. I printed it off about 7 years ago and have been using it off and on, just found it again and don't know why I tried any other roll/bread recipe!

Orange Cream Cheese Frosting

Orange Cookies III

The batter was just like a cake mix. I added about another 3/4 cup of flour but that left the cookies tasting floury. Not sure what went wrong but the only thing that saved them was the orange cream cheese frosting I put on them.

Bacon Crackers

What a pleasant little surprise these crackers are! I only had fat free saltines and 40% reduced fat bacon and it worked out perfectly. I thought the crackers might get soft but they were cooked to perfection. Thanks for this great little recipe Gayle, I'm sure I'll make them often!

Herman Reunion Cheese Ball

I think this needs some additions to become a great cheese ball. Next time I'll add some seasoned salt, green onions, a bit of chopped bacon. Texture was just right. I cut recipe in 1/2 and still made 2 nice logs.

Pumpkin Butter I

5 stars for the flavor but man, how do you bring a solid mass to a boil? My pumpkin puree was very very thick so I added about another 1/2 cup of apple juice. Still so thick there was no "boiling" it. I let it heat on the stove about 15 minutes and then put into jars. It tastes just like pumpkin pie filling to me and very yummy on warm biscuits.

Vegetable Dill Dip

This is the dip I remember from many, many years ago! I finally found the Beau Monde in a specialty food store here in Pensacola (pricey!) but it was worth it to taste that flavor again. I like the addition of the minced onion. The recipe doesn't state if it's fresh or dried but I used dried and I like that flavor. Thank you CATWOMAN2 for this nostalgic yet delicious recipe.

Cindy's Beef Tips

This is one of the best beef and gravy meals I've ever had or made! You certainly can't tell it's lower in fat because the gravy is so rich and creamy. The flavor of the beef when sauted until really brown just makes this so yummy when the bits are scraped up when adding the broth mixture. Fresh mushrooms could be used also. If you are looking for a really tasty down home comfort food, don't look any further!!

Low Fat Eggs Benedict

This is an excellent alternative to 2 cubes of butter and egg yolks! If you are watching what you eat then this is fantastic and very filling for a Sunday morning brunch. You can add a tomato slice or a bit of avacado if you like.

Bacon-Wrapped Scallops

These were ok but I would rather have that rich flavor of the expensive scallops with just a bit of butter and bread crumbs. We took the bacon off before eating and then nibbled on the bacon pieces separately. I had made this as our main dish for dinner with Spinach Casserole from this site and some rice pilaf. Still a nice dinner, just prefer it differently.

Spinach Casserole

I halved this recipe and used fat free cottage cheese, fat free sourcream, fat free cheddar cheese, and Egg Beaters. I placed in an 8 inch square dish sprayed with Pam and baked at 350 for about 45 minutes and it was done. I just mixed the cheese all inside. Very very yummy and would make again in a heart beat. My picky picky husband said it was a keeper as he was spreading it on his french bread!

Soft Onion Sandwich Rolls

These were absolutely fantastic with the Philly Cheesesteak from this site. I made as written with the dried onions but I did top them with sesame seeds instead as I thought there was enough onion flavor going on. I shaped into 6 hoagie rolls and they held up perfectly to the "sloppy" cheesesteaks. I would definitely make these again, and so easy using the bread machine.

Philly Cheesesteak Sandwich with Garlic Mayo

Wow! These were fantastic. I sprinkled some greek seasoning on the raw meat and refridgerated for about 5 hours. I then sauted the peppers, onions and fresh mushrooms until almost done and removed from pan. Added in the meat and cooked for a couple minutes and then added back in the vegetables. Served on homemade Onion Rolls from this site and crumbled some Queso Blanco on top before baking at 500 degrees. Wow, the garlic mayo was fantastic too, just added to all the wonderful flavors. Better than any I've had in a restaurant, that's for sure!!

Light Holiday Tea Cakes

These were perfect for a little breakfast. As you can see by the picture, I had to take it with only 2 of those little babies left!! Hubby enjoyed them as much as I did. I didn't have any pineapple so I used 1 cup of cranberries. Quite tasty for being healthy for you!!

Marvelous Mocha Mix

Absolutely wonderful. I used Splenda, no-fat non-dairy creamer, sugar free Nestle Quick, and de-caffienated coffee! Healthy for you and tastes so much better than the already made ones from the store. Thank you for this great recipe, it's going into some of my Christmas baskets!
