Hello AR Friends!! I think Spring may be here, at least it has been for the last couple days, beautiful sunshine and almost 70 degrees!  We worked out in the yard and it looks like humans live here again instead of piggys :)  Now, if the azaleas would just bloom I'd be in… MORE

About this Cook
I grew up in Stockton, CA and then lived most of my 1st married life in Lemoore, CA. We raised our 3 boys (twins and one more 20 months later)up together but when the youngest son graduated from high school, I realized life was too short to stay in an unhappy, dead marriage. After 23 years, a divorce and a new life. I moved to the Biloxi, MS area and met my wonderful husband now. He is all I could ask for. We have a kitty and a camper and we love them both! She camps with us all the time. I quit my job in August, '08 and my husband is retired (again) so we are enjoying our time together. ***UPDATE*** I'm working again and really liking my job. I don't have to bring it home with me and it's 32 hours per week, which works out perfect. Very happy to report that we are very happy again with a new job!!!
My favorite things to cook
My new favorite is finding low fat, healthy recipes to try. I'm really up for anything to cook.. it's truly my hobby.
My favorite family cooking traditions
Right now I would have to say that having a fish fry is the closest thing to a tradition I have. Not healthy but it sure is good! Fried fresh caught fish, hushpuppies, okra, french fries. All deep fried and all soooo good!!
My cooking triumphs
Beef Tenderloin With Roasted Shallots from this site. I served it to guests and they could not believe that this was a home made meal. For something so easy it's the best meal I've ever made. Also feel very good about my submitted recipes. I'm not one to usually make something up but I like to follow recipes and then maybe make a few tweaks to our liking and needs.
My cooking tragedies
HAHA - It still makes me laugh. My very first meal I cooked for my 1st husband was supposed to be eggs, bacon and pancakes but the skillet I tried to use was not a non-stick. Needless to say.. we had scrambled eggs, torn up bacon, and worst of all, scrambled pancakes.

Eileen's Meatloaf
Excellent flavor and texture. I was so hungry for a good meatloaf and saw a positive review for this one. I used 2 lbs of very lean ground beef and still only 1/2 a packet of the onion soup mix. Otherwise, upped the other ingredients as written. I can't believe there was not any salt or pepper but it's still full of flavor. The sour cream is not noticeable but gives it the perfect texture for slicing thin for sandwiches, which is our favored way of eating meatloaf. I baked the 2 lbs for 45 minutes covered, uncovered for 15 minutes and then topped with some squirts of ketchup for another 15 minutes. Perfectly done and very delicious. Thanks so much for posting your recipe!

Sweetheart Cherry Cheese Danish
I loved this easy, tasty dessert. The combo of the butter, sugar and almonds on top made a very nice topping. I'd make this again for sure!

Great technique to get tender potatoes with so much flavor. I think I liked it best the next morning spooned into a flour tortilla with a scrambled egg on top with shredded cheddar cheese. Now THAT was delicious. I'd make this ahead and just heat some up for breakfast during the week. It's that good.
