Menu for Nov 7 - 13

So glad to see that you are back for the 2nd installment of the Shiver's House Menu!  Last week I stuck pretty close to what I had on my menu except for Friday night.  I didn't make the sesame chicken but I did use this marinade to make some great thin cut t-bones on the cast iron grill pan.  I also baked sweet potatoes and tried to eat some thawed out Chicken-Wild Rice soup but it was awful.  I guess you can't freeze that recipe and have it turn out very well when thawed. 

All is well here in Pensacola, FL, looking out for a tropical storm named Ida.  Hope it misses us or just grazes with some rain, we can handle that!  I do so much love this time of year here in Florida, nice, mild days (I love to lay out in the sun and read a book) and then cool in the evenings.  No A/C or heat needed and that sure helps with the finances. 

On with the menu and I'll try to list some of the sides I'll make with it. 

Saturday - Nov 7  Melt in your Mouth Meatloaf with roasted potatoes and turnip greens.  I'll use Egg Beaters in the meatloaf and homemade breadcrumbs from non-fat bread.  I'm also going to make a loaf of Amish Bread that is sooo yummy!!  I cut the recipe in 1/2 for 1 loaf and it lasts us about 3 days.  Makes great toast too the next morning.

Sunday - Nov 8   Emeril Lagasse Jambalaya - this is fantastic and makes a ton so I usually freeze the leftovers.  I use the chicken sausages from Sam's Club to make this lower in fat.  Anytime butter is called for I use the Land O Lakes light butter with olive oil.  It's 1/2 the fat and calories than regular butter and I love the flavor.

Monday - Nov 9   Left overs of meatloaf and jambalaya

Tuesday - Nov 10  Quick Quiche - again made with Egg Beaters and 1% fat cheese.  I shred my own.  I'll serve a green salad on the side.

Wednesday - Nov 11 (my birthday)  Baked Scallops with rice pilaf and asaparagus.  I can't wait to make this for me!!  I'll use much less butter than called for and panko bread crumbs.

Thursday - Nov 12   Carnitas - going to put it in the crockpot and let it cook all day.  I bought a pork roast last week at the commissary so this will be fantastic for some homemade tacos.  Yummmo!

Friday - Nov 13  (yikes, Friday the 13th) - Pizza Moons  I use the reduced fat crescent rolls, turkey pepperoni and fat free cheddar cheese.  Practically guilt free :)

PS:  I've had requests for the exact Jambalaya I make so here it is:

1 Tblsp olive oil
1/2 lb smoked sausage (I use Conecuh)
1 large onion, chopped
1 cup bell pepper, chopped
1 cup celery, chopped
Salt & Cajun Seasoning to taste
1 cup white rice, raw
1 14 1/2 oz can diced tomatoes with juice
1 Tblsp chopped garlic
2 cups chicken broth
3 bay leaves
1/4 tsp. dry thyme
1 pound shrimp, peeled & deveined

Heat oil in large dutch oven.  Add sausage and cook 2 minutes.  Add onions, bell pepper & celery and season with salt & cajun seasoning.  Cook until soft, about 6-8 minutes.  .

Add rice and stir to coat evenly.  Add the tomatoes with juice, garlic, bay leaves, thyme & chicken broth.  Cover and cook over medium heat 20 minutes.

Add shrimp to pot and cook 10 more minutes covered.  Let stand 5 minutes, remove bay leaves and serve.

I wish I could plan my menu out like that! I have a rough time sticking to a plan, but I need to work on it, I'm sure my pocketbook would thank me. Menu sounds great, Happy early B-day!

I loosely plan my weeks menu around the grocery specials, but I don't lock into specific days for each meal. It sort of depends on my produce selections. You inspire me to tighten up my planning a bit. Good luck with the storm and Happy early Birthday.

Sounds tasty... especially the scallops. When is the tropical storm supposed to get there? We are headed out for florida on friday (bad day to start a vacation being the 13th and all, but Im sure everything will be fine). I am just hoping the weather is nice. Its been nice here, so it would be sad to go to Florida just in time for a storm.

Nice menu Cindy. I can't seem to make up my mind this week. All I know so far is I want Alfredo with Chicken and Pasta one day and Pizza on another. I did save a couple stuff from your menu for another time and the weather sounds wonderful. Hope Ida misses you too.

I got that jambalaya recipe from a girlfriend many years ago so I thought it was the same of EL's on the Foodnetwork. It must be one of the older versions of his, and it works perfect.

Hope you are having a great birthday. Thanks for the inspiration, I'm always trying to come up with healthy versions of dishes and I hadn't ever thought of using egg beaters to make a quiche, I will definately have to try that.

susie I'm in a care home due to severe R.H. and have a hard time getting around, but not eating. I love going thru these recipes & giving them to Ana, the homes owner and cook. She like everyone else has a hard time trying to come up with interesting food. thank you

I grew up in Stockton, CA and then lived most of my 1st married life in Lemoore, CA. We raised our 3 boys (twins and one more 20 months later)up together but when the youngest son graduated from high school, I realized life was too short to stay in an unhappy, dead marriage. After 23 years, a divorce and a new life. I moved to the Biloxi, MS area and met my wonderful husband now. He is all I could ask for. We have a kitty and a camper and we love them both! She camps with us all the time. I quit my job in August, '08 and my husband is retired (again) so we are enjoying our time together.

My new favorite is finding low fat, healthy recipes to try. I'm really up for anything to cook.. it's truly my hobby.
My cooking triumphs
Beef Tenderloin With Roasted Shallots from this site. I served it to guests and they could not believe that this was a home made meal. For something so easy it's the best meal I've ever made. Also feel very good about my submitted recipes. I'm not one to usually make something up but I like to follow recipes and then maybe make a few tweaks to our liking and needs.
My cooking tragedies
HAHA - It still makes me laugh. My very first meal I cooked for my 1st husband was supposed to be eggs, bacon and pancakes but the skillet I tried to use was not a non-stick. Needless to say.. we had scrambled eggs, torn up bacon, and worst of all, scrambled pancakes.
