This cake was made using three layers, each made from one recipe, and baked on a 15 X 20 sheet cake pan. It is filled and frosted with a mixture of cream cheese and whipped cream, (approx. 1 part cheese to 5 parts cream)and is topped with sliced fruit and glazed with apricot jelly. This is very easy to do, and the fresh berries really make it festive.
