Potato Salad Perfected

We call this Baked Potato Salad in this house. I make this exactly the same, only adding a little hot sauce, a bit of paprika and garlic powder. NOTE: This also works with a large head of cauliflower, cooked until crisp-tender.

Potato Skillet

I make a skillet for my boys just like this once or twice a month and it always gets inhaled. It can vary depending on what you have on hand. I will saute onion and garlic and use half bacon fat/half butter. Using sea salt and eliminating the seasoning salt and garlic salt will warrant a tastier result. Always a boy pleaser and doubles REAL well. This is also great to cure hangovers.

Onion Rice Pilaf

Linda's Monster Cookies

I cut this recipe in half and it's a good thing I did because just half a batch made a TON. I made a few changes, just for what we like in our home. I doubled the vanilla, used half chopped pecans and cashews in place of half of the oatmeal, ground the oatmeal down in my blender for a smoother consistancy and upped the amount of M&M's. (I only had dark chocolate peanut M&M's, so I used those. A whole family sized bag, that is.) I also added half a package of Reese's peanut butter chips just to use it up. I used my #40 cookie scoop to make uniform cookies. 350* for 11 minutes was about right for these. Very good. Note: This gets knocked down to three stars because they dry out so bad and get stale. Wasted ingredients is no fun.

Big Batch Kris Kringle Cookies

I cut this in half but I followed recipe exact. I almost wish I hadn't cut this in half. Very, very good. 350* for ten minutes made for a soft and just done cookie. Very Christmas-y. NOTE: I think these would be outstanding with orange zest. I'll try that next time. Half of a batch of these didn't last 24 hours in this house.

Souper Simple Mac 'n' Cheese

As is, this is A LOT like Mom's macaroni and cheese growing up. When I make now last minute for my family, I add 8 oz. of shredded sharp cheddar and a little dijon/Frank's Hot Sauce stirred into the mix, use all milk, and add another 4 oz. of cheese on top. To make it a full meal deal, you can add a 1/2 c. of chopped ham and 8 oz. of frozen broccoli. I also suggest boiling the pasta halfway before adding it to the mix.

Chicken Casserole Mississippi

We were underwhelmed with this. I omitted the seasoning salt as most cream soups are salty enough on it's own and added fresh garlic and a couple choice seasonings from the cabinet. We ate it but we're just not into it.

Cinnamon, Spice and Everything Nice Cookies

Amazing little cookie. I did end up cutting this recipe in half, I almost wish I hadn't. Only change I made was using all butter. I found that nine minutes at 350* was perfect for these cookies. I used my small #40 cookie scoop for this and it made perfect sized cookies. And the taste? Wow. These might be my new favorites!

Cranberry Salad

I've been making this cranberry salad for years. I run the cranberries and the sugar through my food processor for a coarse chop and let it sit for a few hours. I then combine it with the rest of the ingredients. Only things I do different is use chopped and peeled Granny Smith apples and use sour cream mixed with vanilla instead of yogurt. This is good with the French Vanilla Cool Whip, if you can find it.

Daddy's Dang Banana Cake

I had buttermilk so I used that instead of soured milk and I also used half whole wheat flour. I added a tsp. of cinnamon and 3/4 tsp. nutmeg because we like spice in our banana bread in this house. This baked up nicely, only needing to be covered halfway through with foil to keep from scorching. Very good right out of the oven. Noms. Is there anything better than a good banana bread? NOTE: This took about 65 minutes for me to bake two medium sized loaves of bread.

Alfredo Sauce

Just what I needed. I'm trying to cut back on our pizza budget and make it at home. I used this alfredo recipe as a base for a Chicken Bacon Ranch pizza. I sauteed some chopped onion in with the garlic and butter and when the sauce was ready, I added in the dry spice from my own ranch dressing dry mix and bacon. This DID need a little more half-n-half, it was a little thick. Next time I use this for pizza, I'll thin it out even more. It was real thick and rich, a little overkill. Worked out great, though!

Stuffed Chicken Valentino

Quite easy. I made this last minute, after reading a rave review. Instead of chives, I used fresh basil leaves. I did carefully sear the chicken on the outsides in the EVOO before transferring it to the baking dish and finishing the cooking process. I served this with hot pasta that I tossed with melted butter, parmesan cheese, basil and sea salt/fresh ground pepper. Not a scrap left. Kind of wish I made a recipe and a half because my husband was bummed there wasn't more. This one's a keeper. NOTE: I was interesed in this recipe because it called for jarred roasted red peppers, which I had found at my local Dollar Tree. This didn't cost much to make at all.

Banana-Nut Chip Bread

This came together well. I used butter instead of vegetable oil, that was the only change I made. I set this to bake for 55 minutes and it wasn't quite done. Another ten and the edges burned on me. I'm a little ticked at myself. I found this quite sweet and I'm not sold on the combo of chocolate, oatmeal, cinnamon and banana though my boys liked it. I doubt I'd make this again for us, I might to give it away. As is, it's too sweet. Way overkill.

Spanish Potato Omelet

Thank you for the recommend, MI$$DREA. I made this for my husband and I this morning. Only thing different I did was use butter instead of EVOO and added shredded white cheddar. I browned the heck out of my potatoes as we like them more done. Very good. We haven't had a GOOD omelette since we got back from Vegas.....we were quiet happy with this.

Depression Era Corn Chowder

I sauteed the onion (with a little fresh minced garlic) in the butter until translucent, then added the rest of the ingredients. I really enjoyed this simple soup. It's both simple and comforting. I did add just a little hot sauce to mine before eating. Inexpensive and homey.

Sweet Potato Bread

I'm not really all there tonight, apparently. I made this according to recipe only using two tsp. of pumpkin pie spice and a stick of softened butter in place of the vegetable oil. I thought it was rather odd that the batter was so thick. I shrugged and spread it into two loaf pans and got it into the oven. Not two minutes later, I'm looking at the recipe to see if the recipe needed something and BLAM. I'd forgotten the darn eggs. I got the bread mixture out of the loaf pan and added the eggs, which made the batter fluffy and pretty. This baked up beautifully, only needing to be covered halfway with foil to keep from burning. And the smell? Lovely. This did take 65 minutes to bake both loaves. I plan on serving one loaf for breakfast tomorrow and carrying the other to a friend. I'll update on how we all liked it then. NOTE: Excellent!

Easy Baking Powder Drop Biscuits

My grandma has been making biscuits like this for years, as did her mom and my mother. Now, I make them for my children. These will always be my favorite because of that. I make these now with buttermilk or soured milk and sometimes if the mood sets me right, I might add spices to compliment whatever meal I'm making.

Homemade Wine Coolers

This is my new favorite way to drink wine. Even my husband, the whiskey drinker, likes this. This is great to keep the ingredients on hand for those times you have the girls over for an impromptu MNO.
