Roasted Asparagus with Shallots

In-credible. Nothing like roasted vegetables, especially asparagus. I ate mine, then ate the kids'. They didn't like it but I DON'T CARE. All mine!

Burnt Butter Rice

I actually had to do this twice because I burnt the first batch. I'm not the best rice cooking-type person, my husband can attest to that. Second time, I had it. This went really well with Fierro Chicken, as it didn't compete flavor-wise with an already strong main dish. NOTE: Next time, I might add a little garlic and onion.

Fierro Chicken

I made homemade enchilada sauce and doubled the mushrooms. We're a mushroom-y kind of family. I did add a bit of cilantro and lime juice. I think making your own enchilada sauce and fresh ingredients is key. This is quite good, best paired with a good rice to help sop up the juices. I liked how easy it was to pull this together with items from my pantry/freezer without much stress, even making the homemade sauce. I'll make this again for sure.

Gluten Free Ginger-Honey Crunch

I came up with this recipe in an ingredient search for items I found on sale at my local Grocery Outlet. I used off brand Rice Chex for this recipe and used half ginger, half cardamom. Almost everything I used in this recipe was found at Grocery Outlet and this was quite cheap to make. My oldest and I made this together, which was a fun project for the both of us. Not too difficult, either. My kids and I really enjoyed this, especially my youngest. This one would be a great holiday recipe to make to munch on or for a movie night at home to share with the family, which is what we did.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

Very, very good. Instead of water, I used apple cider and I used whole milk. The whole family devoured this. Quite the nice breakfast to wake up to, smelling all wonderful and cheery. I'll make this again. NOTE: Next time, I'll add the nuts right before serving, so it dosen't get all cooked in with the oatmeal. I'd like a little crunch. I should clarify, I used the "warm" setting on my Crockpot. Mine's an old 70's version that has one of those. I didn't have any issue with mine burning. I do go to bed really late so mine probably went into the crockpot closer to midnight so mine wasn't cooking any longer than six hours.

Cranberry Raspberry Flirtini

If you've ever spent all day with two boys at the Fair, you'd be about ready to swim in alcohol by the time you got home. This was a nice feminine drink, which I appreciated. I doubled both alcohols only because today was so rough. Great combination.

Green Chile Cheese Beer Bread

No self rising flour so made mine with baking powder and salt. I used a good ol' Busch beer for this bread, as I've always found that the cheaper beers make the best beer bread. I also used Cracker Barrel's 2% sharp white because that's what I had on hand. With most beer breads that I make, I drizzled two tbsp. of melted butter over the top before baking. This came out nicely.

Cauliflower and White Cheddar Cheese Soup

My heads were really big, so I doubled everything but the cream. I wanted a chunkier soup, so I just mashed the tender cauliflower with a potato masher for thicker bits instead of running it in the blender. When sauteeing the garlic and onion, I threw in two chopped red peppers that were about to go south I used heavy cream instead of milk and SLJ6 was right on about the thyme. I did add a bit of red pepper flake after trying it. Very good soup. This will be quite nice to eat on all week. Makes a lot so make sure you really like this or you have family that loves soup.

Banana Cake V

Yes, quite moist. I did add about a half cup of chopped walnuts and 1/4 tsp. of nutmeg. My family and I really enjoyed this, me especially with hot coffee. This took 45 minutes to bake, covered halfway through with foil. NOTE: Little sweet. Next time, I'd cut the sugar in half and it'd be perfect. Let the sour cream/butter come through a little more.

Chicken Cordon Bleu Bites

Good start. I did add a little cajun seasoning. These came together well and cooked up nicely. I served this with a white wine-dijon-cream sauce I came up with on the fly, only thicker to dip. Kids especially liked this. This would be great for a football game appetizer.

Toffee Apple Pie

I used the Harden Your Arteries Pie Crust from this site for the pie and followed the recipe exact. The toffee bits in this pie ruined it for us. My oldest took one bite and refused to eat anymore, and he'll eat just about anything. I also took one bite and wouldn't finish it. My husband saw our reaction and refused to touch it. The only person who did eat it was my littlest. I think it's a good basic pie without the toffee bits, which is why I give it three stars. If I were to make it again, I'd cut back on the sugar, too. Way too sweet. Naples34102 was right, this does need longer to bake. It took me about an hour.

Cheesy Jalapeno Corn

I cut the jalapenos in half, only because I have kids, and added one chopped red pepper that I'd sauteed in a little bit of the butter. I also used FF cream cheese. We liked this. Next time, I'd like to do half sour cream.

Easy Mexican Casserole

Good starter recipe. I used half ground beef and half ground turkey. I added one batch of Bill Echols taco seasoning, a little lime juice and a can of chilis. I think it might have been a little bland without it. My boys really liked this. I thought it was just okay. NOTE: You might want to rinse your beans, to remove the "tinny" taste.

Favorite Banana Blueberry Quick Bread

I used half wheat flour, half white and cinnamon roll instant oatmeal. I also added a little vanilla flavoring. This makes a good sized loaf, so I had to cover it with foil halfway through to keep it from burning. Tasty loaf!

Alyson's Broccoli Salad

Good broccoli salad, though a little sweet. I'll make this again, only omitting the sugar. The cranberries gave it just enough sweetness that the added sugar was unnecessary. I served this with Ruby Drive sloppy joes and cajun-spiced tater tots.

Cajun Spice Mix

I mixed this up today and sprinkled a good amount on Ore-Ida's tater tots, to go with the Ruby Drive Sloppy Joes we were having for dinner. Good stuff! I served it with my homemade ranch dip, it went well together.

Ruby Drive Sloppy Joes

Other than sauteing an onion and a good amount of garlic in butter with the meat and adding a little liquid smoke, this is hands down the best sloppy joe filling I've ever had. I topped this with shredded sharp cheddar and toasted the buns a bit to make them hold up a little better. This is my new sloppy joe recipe. Even my husband who loves that nasty canned junk loved this. AWESOME. NOTE: If you don't like all that ketchup, think about cutting the ketchup in half and using either chili sauce or BBQ sauce.

Pineapple Cake II

This was a-maz-ing. Followed the recipe to the letter, even making the buttery sauce to pour over the top. Even my pineapple hating husband ate THREE PIECES. Incredibly moist and delicious cake. Next time, I'll add pecans as another reviewer did.

Berry Lemon Mousse Parfait

Dessert? Nonsense. We ate this for breakfast! This was just enough for four people, half cup of berries each with the "mousse" dolloped on top. We loved it.
