About this Cook
Typical 21st century life. work all day, cook dinner....try to gather up enough energy to bathe my child OR clean off the dinner table.
My favorite things to cook
casseroles. there's just something about them.....
My favorite family cooking traditions
spaghetti pie...made with spaghetti, eggs, raisins, pepperoni in a cast iron frying pan. home made raviolis. dough boys, fried in bacon grease. pork roasts with garlic and rosemary.
My cooking triumphs
a cheesecake...white chocolate rasberry swirl. it took me 3 hours and came out perfect. i also make a damn good salmon..
My cooking tragedies
i made a parmesan and pancetta torte... from giada..on food network. it was totally gross.....

Jalapeno Popper Spread
*UPDATE* i have made this dip AT LEAST TEN TIMES IN THE PAST COUPLE YEARS, EVERYTIME IT HAS BEEN THE BEST DISH AT THE PARTY. ALSO - I THINK IT GOES BEST WITH FRITOS SCOOPS. i made this dip for a super bowl party and everyone loved it!!!! i thought it would be super hot w/ all of the peppers, but it was very tolerable. i used light cream cheese and light mayo and it came out perfect. i had a hard time find those size cans of each pepper, so i used a little more than what was called for, and it only made it better. i would recommend this recipe for any kind of get together. it is very quick and easy and i promise everyone will love it!!
