Roast Pork with Maple and Mustard Glaze
This was an amazing recipe. I did have to cook the meat for a bit longer (about 1 hr. and 25 mins for just over a 2 lb. roast), but it was really flavorful. The sauce was a little thin, but I basted it every 15-25 minutes, as well as turned it once, and it was really a success!

Broccoli and Tofu Stir Fry
Even after marinating the tofu and spicing things up a little with some ginger, this was just lacking. The flavor was bland. I added Sriracha to the finished product, but it was still lacking flavor. If I were to make this again, I would definitely marinate the tofu and add onion, although I don't know if that would help a great deal.

Fast and Friendly Meatballs
I added some parmigiana cheese and since I did not have seasoned bread crumbs, I added garlic powder, onion powder, black pepper and oregano. These were delicious. After baking, I simmered them in sauce for a bit before serving over spaghetti. This was a real hit!
