My favorite things to cook
I'm a vegetarian so I love playing with new ideas and foods to find things that are both tasty and health-conscious without incorporating meat. My husband isn't veggie like me, so he's my true test of 'pass' or 'fail'!
My cooking triumphs
For a family get together I made a completely homemade meal with: homemade spinach ravioli stuffed with sauteed mushrooms; homemade fresh tomato sauce, homemade caesar salad (even homemade croutons!), and foccaccia bread. Plus a homemade cake of course!
My cooking tragedies
What possesed me I'll never know, but for my husband's birthday at my in-laws I made (wait for it) BEER cake for a birthday dessert. It was soooo awful even I couldn't eat it. We still hold it as the benchmark all time low as in "well, it could have been beer cake..."

Roxie's Bran Muffins
I went looking for a 'banana-bran' recipe and came across this one. I love that these are healthier than most muffins, and can easily be a breakfast-on-the-go. I make them exactly as the recipe is written (although sometimes I use chocolate chips instead of raisins to please my three year old!) Great recipe.

Whipped Cream Cream Cheese Frosting
A keeper! This turned out great and the taste is fantastic! I used for layers rather than outside frosting and I put a thin layer of raspberry preserve on top before the cake. I read the other reviews and used whipped cream stabilizer (basically cornstarch) to keep it stiff, and used the white sugar rather than icing sugar. Think I need to make some cupcakes to use up the remaining icing...

Pecan Torte
I am the 'birthday cake baker' in our family, and I'm always looking for new and different cakes to try. I followed this recipe almost to the letter and it turned out great. *Note the second mention butter (one cup) is actually 1 cup of buttermilk. I also made the icing the day before, and it kept well in the fridge overnight. Overall a great cake - everyone loved it!
