Cottage Cheese Chicken Enchiladas
This was great! I made this for some friends. I made two substitutions. I used the fiesta cheese blend because that was on hand and the green chile enchilada sauce instead of the red sauce.

Orange Cake
I made the recipe as is. It was easy to make and tasted plenty orange to me. I let the glaze set out for awhile so it wasn't so runny and allowed it to slowly absorb into the cake. Everyone loved the flavor and how moist it was.

Chocolate Banana Bread
I made this and thought it was excellent. I substituted regular cocoa and semi-sweet morsels for dark chocolate cocoa and morsels.
