Russian Eggplant

My husband loved this, my 8 year old ate it, but didn't love it. A nice alternative for a vegetable side dish.

I wish that I had read the reviews before I made this dish, but I was in a hurry. As written, this is a 3-star recipe and not worth the effort. If I make these again, I will filet the breasts or bake in the oven as others have suggested. Mine took anywhere from 12-15 minutes to cook and were nearly burnt on the outside. I will also use lemon zest instead of lemon juice. I used real butter and could not get the lemon juice to incorporate into the butter. This might be okay to try again with some adjustments.

Lime Chicken Soft Tacos

Like other reviewers, I used cilantro instead of oregano because we are cilantro lovers. This was quick, easy, and a refreshing change from the chicken taco seasoning packets. Thanks for the recipe!

Empanadas

FANTASTIC! These were so easy! I rolled the dough in powdered sugar instead of flour as another reviewer had suggested. Also, I wasn't paying attention and rolled these in cinnamon sugar before baking instead of after. We used peach and blueberry preserves. Everyone loved them! I can't wait to try them with savory fillings.

Funnel Cakes IV

I misplaced the recipe I had been using for funnel cake, so when my daughter asked for some this morning, I turned to allrecipes. This recipe is much better than the one I had been using. My daughter even said they were better than the carnival's! I followed the directions and started with 1/2 the flour--I found that to be plenty. Thanks for the excellent recipe!

Japanese Onion Soup

This was not exactly like the soup I am used to at our local restaurant, but I was pleased with the flavor, and it's a great way to keep me on track with Weight Watchers!

Cranberry Apple Pie II

This was a fantastic pie! I always prefer a crumb topping on my apple pies rather than a top crust, so that's how I made this pie, but other than that, I followed the directions exactly. It was so good, my husband had it for breakfast this morning!

Italian Grilled Cheese Sandwiches

I made this for my daughter, who loves grilled cheese sandwiches, 4 days ago. She has asked for it 3 times since then. I am going to the store today for more cheese, and she wants to try pepperoni on it. Like other reviewers, I make this on the stovetop, because that's how I'm used to making grilled cheese. I will mix up some garlic butter to keep in the refrigerator. She also loves having the marinara sauce for dipping. Thanks for the wonderful idea!

Easy Pistachio English Toffee Ice Box Cake

I just made this for a church dinner and people couldn't say enough about it. It's very easy to put together, and very easy to double if you have a big enough pan. I wouldn't change a thing. Thanks for the great recipe!

Day Before Mashed Potatoes

I made these for a potluck and they were gobbled up! I was a little upset that I didn't get to bring any leftovers home. I did add cheddar cheese and bacon bits before baking as others had suggested. I will be making this again!

Asian Coconut Rice

I was curious about this recipe and decided to try it one night with some pineapple and apricot chicken. My family loved it! This is the only rice they want to eat now. We have a lot of stir fry with vegetables and chicken, and if I don't make this rice, I get in trouble. The only thing I will say is that I have never had to cook this rice for 18-20 minutes. I start checking mine at 10 minutes, and it almost burns at 12 minutes. Great alternative to plain white rice!
