Quick Italian Vegetable Soup
Great recipe, Instead of 6 cups of water. I used 4 cups of chicken broth, 1 cup of water & 1 cup of tomato juice. I also added 1/1 a tsp of thyme. I also let it simmer for about an hour to ensure the vegetables got cooked.

Boilermaker Tailgate Chili
Awesome Chilli recipe. I followed the recipe to a T. The only changes I made was I added more chili powder, 1/2 a cup total and a cup of diced banana peppers. I like my chilli when it bites back. I also served it on a bed of basmati rice. Thanks for the recipe its a keeper. Its also true it does taste better the longer it sits.

Mexican Bean Salad
Great Salad, the fresh cilantro really made the difference. I noticed alot of people mentioned to cut back on the vinegar & oil. I've made this a few times and I've noticed I really had to make sure the beans were properly drained if not there will be alot more liquid to your salad. Besides the mix of the beans with the vinegar tastes to good to cut back on
