About this Cook
as a child, my parents made it a priority to "expose" me and my sister to the fine restaurants in our city and around the world. I have grown up eating a variety of foods, and love good food, made with quality ingredients. I don't love the excessive amounts of bad food sometimes served in todays restaurants!
My favorite things to cook
traditional cajun dishes: Redbeans&Rice, shrimp scampi, barbequed shrimp, jambalaya, gumbo, etc... baked goods; I am the go to girl for desserts in the family.
My favorite family cooking traditions
several times a year my mother, sister, and I all get together and prepare a lavish and extravegant Traditional English Tea which have been inspired by those we enjoyed at the Windsor Court, Various Ritz Carltons, and most of all the phoenician in Scottsdale, AZ. It is time consuming, but by far my favorite family cooking tradition.
My cooking triumphs
finally understanding yeast bread recipes when i was coming into my teens. coming to know what spices complemented which ingredients, and knowing how to created the taste I desired without having to test a recipe first.
My cooking tragedies
I attempted to make Petit foures and I guess just used too small of a baking pan... they were not what I remembered getting at the bakery as a child.

Molasses Cookies II
I have looked forever for this molasses cookie! Spicy, chewy, but crisp on outside~ yum! I made some changes though: creamed 1/2 c. Smart balance spread, melted, 3/4 c brown sugar, molasses, 1-2 tsp. Vanilla, 2 tbls. light vanilla yogurt-- dry ingredients- used 1/2 tsp. salt- scant 2 1/2 cups organic unbleached flour-- combine and at the end add in 2 tbls. of boiling water, blend in w/beaters- chill dough, scoop, sugar-coat & baked for 9-10 min. THANKS SO MUCH FOR THIS!

Cathy's Banana Bread
I made this recipe yesterday for my family. It has replaced our favorite banana bread recipe. I made 2 changes to this recipe. I substituted 1c. plain yogurt for the sour cream, and added 1c chopped walnuts, and 1c. mini-semi-sweet chocolate chips. Instead of baking it in the 2-3X7" loaf pans, I baked it in mini-loaf pans, and it took only about 25 min. to bake! they were absolutely delicious! thanks.
