Onion Chicken in Balsamic Sauce

Changed to 2 bone-in chicken breasts, and 1 can drained diced tomatoes, since I didn't have any sun-dried on hand. This was really good.

The flavors were really good. You have to have the fresh basil. That really made it! This is an easy and unique dish.

Spinach Garlic Soup II

It turned out very good after I doubled the spinach, added a potato, exchanged the butter for EVOO and put a 1/4 C cilantro in blender before pureeing. I also used very little milk, mainly the broth that had chicken bouillon used to boil the spinach, carrots and potato. I think the cilantro calmed the garlic down. It was excellent!

Marinated Wild Salmon

Fabulous! I changed the vinegar to plain balsemic as someone had suggested and also changed the red pepper flakes to cayenne pepper. I took out all onion. This is a really wonderful recipe to plank grill.

Snow on the Mountain Green Beans

I halved this recipe for just two. I boiled the beans in chicken bouillon. Be sure not to overcook the beans since you are going to cook them a little in the frying pan. I put 2 T. EVOO in the frying pan along with 2 cloves of minced garlic. I cooked the garlic for a little while and then added the drained beans. I poured a couple of teaspoons of rice vinegar on it along with the sea salt and pepper. I also squeezed a couple of lemon wedges over the bean/garlic mixture. Then after mixing all well I topped with the feta and let sit for about 5 min. until the feta warmed up some. I think next time I'll use a little lemon zest too. This was wonderfu.

Spicy Black Bean Cakes

Use 2/3 can of refried beans and 1 can of rinsed and mashed black beans, 2 Cups shredded sweet potato, 1 cup of chopped cilantro, 5 cloves minced garlic, 1 sliced and seeded jalapeno, 1/2 tsp. red pepper, 2 tsp. cumin, 2 beaten eggs, and 1/2 cup rolled oats. In skillet with 2 T. EVOO, saute garlic and jalapeno. Add sweet potatoes. Cook for 10 min. on med.-low heat. Remove from heat. Let cool for a few minutes. Add Everything to mashed beans and mix well. Put mixture into refrigerator for at least an hour. Preheat oven to 400 degrees. Pat out into 16-18 patties. Bake 20-25 min. turning over midway. The 1/2 cup sour cream, 1/2 chopped cilantro, 1/2 lime juiced and zested, sauce is really good.

Lemon-Pepper Salmon

Added 1/2 cup of oil packed sun-dried tomatoes. This was amazing. I skipped the couscous for mashed potatoes, but it probably would have been better with a rice pilaf.

To Die For Blueberry Muffins

Awesome! I made mini loaves out of this baked at 350 for 30 min. I doubled the topping for it, but I probably shouldn't have. It would have been fine with the original amount of topping. I also used buttermilk instead of regular milk.

Roasted Red Potato Salad

Wonderful and easy potato salad. I got rave reviews from my toughest critics. The only thing I did differently was to roast minced garlic, about 4 cloves, with the potatoes. The garlic added a ton of flavor. I also can't eat raw onions, so I left those out. They weren't missed.

Deb's Scallops Florentine

My husband doesn't care for bread crumb topping so I eliminated this. I substituted the fresh spinach for the frozen, wilted it first in evoo and garlic. I also added shrimp, but it really didn't need it. Wonderful scallop recipe for people who don't normally eat scallops.
