Corned Beef Hash Cakes
Have been making for years. Mom made these when I was a little kid. We use left over beef roast instead of corned beef. Today I used left over venison roast. I really don't measure since we have been making for years. The difference is that we grind the meat with a meat grinder and we use a egg. It is easier to shred, but I feel you get a more even texture and taste by grinding. If you don't want to mess your hands up by patting, use a measuring cup, put in fry pan and squash with a spatula. I prefer to use olive oil. If you want to freeze, spray a pan with cooking spray, make the patties by using the measuring cup, spatula method. When froze put into freeze bags. It also is a must with me that I use ketchup on top of the patty. I also put ketchup on top of corned beef hash and fried potatoes.

Cream of Fresh Asparagus Soup II
I saved and froze all the woody ends of the asparagus. After I pureed I used a sieve to remove the stocky pulp which didn't puree well. Came out tasting great. A little more work but worth it because I didn't want to waste any aspargus.

Easy Sweet Potatoes with Kahlua
Made the recipe for 3 servings instead of 6. Called for 1/4 cup butter - used 3 tsps Butter Buds to cut fat and calories, 2 tsps water and 1 Tbsp butter. Next time I will use just Butter Buds and water. Called for 1/3 cup brown sugar - used only 2 Tbsp. It was more than sweet enough for me. To cut calories I will use only 1 Tbsp. next time. I liked the addition of Kahlua. Very tasty and would make again. My changes are only because I prefer to try and cut calories for myself. Didn't add raisins or pecans. Boyfriend also liked.
