Way too much coconut is called for, I put about 2 or 3oz. and one more cup of ice... that came out really well.

Didn't love this recipe. It was way too moist because of the amount of bananas used, that made it a little too mushy for my taste. It did have an ok flavor though. My husband took some to work and they loved it... so my taste obviously isn't the same as everyone! I just like bread to be a little more dry.
