One of my first attempts cooking for a boyfriend, I made steak (which I had never made before). I didn't have a grill so I used the broiler. I also used a dry cut of meat and pretty much made a well seasoned piece of cardboard! Haven't tried it that way since.

Stuffed Green Peppers I
Awesome! Even the kids that swear that don't like stuffed green peppers ate this and loved it! Of course, they still didn't eat the pepper! Also, a tip I learned from my mother is to use drained canned sour kraut and use it to go underneath each pepper so it will not burn on the bottom of your baking dish. Honestly, the kraut with the stuffed green pepper tasted really good! Yummy, I will definately make this again!

Pina Colada III
It was alright. Very basic. Did add pineapple to mix, made it taste more tropical! The amount of rum was so minimal that it did not even make any difference and I am not a drinker! So if you're looking for a drink mix that has a little more kick, add more rum to your liking. I did originally use this recipe for virgin Pina Coladas and it was excellent for the kids, they loved it! I did not add water to replace the rum, I used the pineapple juice from the canned pineapple. I also added whole milk to cream it up a little bit more. I did use the cream of coconut instead of coconut milk, it had a very good flavor! The amount of ice required in the recipe was not enough to thicken, it was very runny. I guess it's a personal preference, but I liked it thicker and put more ice in it.

Easy Cheese and Ham Scalloped Potatoes
This was the best I've ever had! Of course, I doubled the recipe since I have a large family. I used 5 lbs. Yukon Gold potatoes, 2 cups sharp cheddar, 2 cups mild cheddar, approx. 1 1/2 lbs. leftover ham, I only had 1 clove of garlic (I used garlic powder also), a medium onion (diced pretty fine), salt and pepper liberally to taste, extra garlic powder (that's how we like it-full of flavor!). Mixed all of it in a big bowl and put in one 9x13 pan and one 5x7 dish. In the larger dish, I put 1 1/4 quarts of heavy whipping cream and 3/4 quart of heavy whipping cream in the smaller dish. I did bake at 350 degrees, but I ended up baking this for an hour and a half (10 minutes longer for the larger dish). I know this review is long, this could really help the cook with 7 or more people to feed! This was not too cheesy, even with all the cheese I used. It was very rich, but so very good!!
