Sugarless Bars

As I was using these bars to help out my 3-yr-old's "system," I wanted to make them appealing as possible. So, I added some seasoning with 1 t cinnamon, 1/2 t each of cloves and nutmeg. I replaced 1/2 the butter with applesauce, and then an additional 1/2 c applesauce for more flavor. To account for that added moisture I dumped in 1/2 c flax.... another digestive helper! My son GOBBLED THESE DOWN! I told him it was cake and he thought they were simply delicious! Oh, rather than a 7x11, I baked these in a 9x9 and that worked perfectly.

Strawberry Coffee Cake

WOW, this is excellent! Made it for Bible study and people ate it until it was gone. There was a trained chef in the group who said it was 'professional quality!" Small changes: I doubled it and put it in a 9x13, used half brown sugar in the topping, and used walnuts instead of pecans.

Clone of a Cinnabon

Very popular when I make these. My only problem is no matter how long I knead, I can never seem to make these turn out as airy and soft as I like. Maybe that's because I don't use a bread machine. Nevertheless, very good!

Irresistible Irish Soda Bread

Gotta give this recipe props for the fact that it is still delicious even though I forgot to add the sugar! I will definitely make it again... the right way! Very good topped with jam while still warm.

Johnny Cake

I've made this many times and it's a sweeter, moister replacement to cornbread on your table. FYI, I had always put the ingredients together the complicated way as directed in the recipe, but I was short on time tonight and just basically threw all the ingredients in and it turned out the exact same. Much simpler!

Cranana Jam

If you've never made jam before, start with this recipe. The ingredients do the work themselves. The result is beautiful, delicious and unique. I have made bunches of this for Christmas gifts! To can: wait for jam to gel a bit (this took mine about 45 minutes,) put jam in your canning jars, place in large pot, fill with water to one inch above lids, and boil 15 minutes. Remove and place on towel to dry. The lids will suction down while cooling.

Chicken Noodle Salad with Peanut-Ginger Dressing

Wonderfully flavorful. A different option that will spice up your routine, but that even the pickiest eaters at your table will have fun with. My kids LOVED it. One change: rather than using canned chicken broth, I saved the water I boiled the chicken in and used that. Healthier and cheaper.

Chicken and Biscuit Casserole

Just okay. Not nearly as flavorful as pot pie, and with all the prep that goes into the "soup" part, you might as well whip up some homemade biscuits to go on top. It might improve the quality of this recipe. I won't make it again.

Spicy Three Pepper Hummus

I subbed peanut butter for the tahini, as it was what I had on hand. (Any nut butter would work.) 8 is too many cloves of garlic - cut it in half and you'll still have plenty. I sauteed my garlic in olive oil before adding it to the food processor with the rest of ingredients. Took care of that raw garlic unpleasantness. I also had to add extra oil and lemon juice; it was dry without. Very good final product!

Chantal's New York Cheesecake

Like one reviewer said, this is a "purist's cheesecake." It stands alone with no topping. I followed the tips of lining the pan with foil & cooking in a water bath. The only alteration I made was to use a shortbread crust rather graham cracker. Decadent!

Chicken Pot Pie VIII

First, the crust is phenomenal. I had to add season the filling considerably from what the recipe calls for though. I added all the good stuff - parsley, garlic powder, more salt. I prefer a pot pie with more big chunks of veggies, but this one has a nice, thick consistency & when modified, flavor.

Glazed Peach Pie

Very fresh tasting & very easy. I added 1 t vanilla and 2 t cinnamon - total comfort food. Served with a scoop of vanilla ice cream. This stuff didn't last long at my house.

Cream Filled Cupcakes

Contrary to other reviews, I loved the cake part of this recipe. It was moist and traditional tasting and held the filling (which is to die for) very well. I used the chocolate frosting recipe another cook posted for the tops: 1/4 cup butter, melted; 1/2 cup unsweetened cocoa powder; 1/3 cup milk; 1 teaspoon vanilla extract; 3 1/2 cups confectioners' sugar. Then decorated with the white filling. If you're like me, you'll want a little extra of that, so I recommend adding a half (less than doubling) to that portion of the recipe.

Zucchini Souffle

This recipe is great but I wouldn't make it without adding tomatoes! I put in 2 fresh, chopped. I also pumped up the salt and pepper a touch, and added 1/2 t each of garlic powder and curry powder. For those who found the recipe bland, those additions really make a big difference.
