My favorite things to cook
I love experimenting! There are never enough delicious good-for-you recipes available so I enjoy making up my own. I change just about every recipe I run into to make it more healthy. It's fun to watch my kids fall in love with healthy food. Plus, when you eat a healthy meal you have calories open for dessert, which is my favorite thing to cook ... and eat! Stir-fry is a family favorite because it's fast, easy and you can put whatever you have on hand in it. Same with soup!!

Quick Sausage Party Melts
Easy! I toasted the rye squares separately first, so they would be nice and crisp. (I've had a sogginess issue in the past w/o this step.)

Mexican-Style Spaghetti and Meatballs
Really tastes different that your standard spag & meatballs -- has a killer kick! I added cumin to the meatballs and sauce, b/c if it's Mexican I feel ya gotta have the cumin, and also added a diced jalapeno to the sauce. Great variance to a weeknight staple!
