Creamy Corn Chowder

This is a simple, delicious, healthy and surprisingly vegan recipe that my entire family loved. I added about 1/2 a cup more of the vegetable broth and took another reviewer's advice and sauteed the vegetables with vegan butter and thyme and a about 3/4 tsp. pepper flakes. I also left more of the vegetables and potatoes out of the blender. I will definitely be making this again. YUMMY!

Butter Bean Burgers

Absolutely delicious! I added a little onion powder, red pepper flakes instead of jalepeno, and parsley. I'm thrilled to find tasty vegetarian meals I can share with my friends! It makes my lifestyle so much better. Thank you for sharing!

Vegetarian Tortilla Soup

Very delicious. I added a little chili powder and more cumin than called for, and about a tablespoon of crushed cilantro. I also added a little more of the crushed tomatoes and black beans for protein. A dollop of sour cream on top, and it's perfect!

Fish with Pico Garlic Rub

Very simple, fast and delicious! My picky fiance even helped himself to seconds. I didn't have any Chipotle seasoning around, so I substituted chili powder instead. I also added a little more lime than usual, and served it with a side of pico de gallo.

Addictive Sweet Potato Burritos

As my first vegetarian meal, I'll have to say it was surprisingly delicious, easy, and filling. It's going to be a common meal in my house... even my meat loving boyfriend loved it and asked me to make it again! I also took the advice of several other users and used black beans instead of kidney beans, and added a little sour cream on the outside of the burrito (after the baking). Yum!

Beef Pot Pie III

Definitely a keeper, but it needs a little more than carrots and potatoes. I added a little corn, celery, and browned the steak with onions and various spices (a little Dijon mustard, too). I didn't boil the meat, either... I prefer it a with a little substance. ;-)

Absolutely delicious! It was hard to find ground pork, so it might be tasty with ground turkey instead. I added a little ground ginger and cilantro to the mix, too. Will definitely make again!

Beef Nacho Casserole

I made several changes myself: I added sour cream instead of Miracle Whip (gross), fresh cilantro, cumin, chili powder, taco seasoning, red pepper flakes, and a can of refried beans into the mixture. I used Kraft's Taco Cheese instead of colby, as well. I topped it off with sliced black olives and fresh tomatoes, placed foil on the top, and baked for 25 minutes. YUM! Definitely will make again! All my friends LOVED it.

Jean's Homemade Chicken Noodle Soup

It was very tasty... I used about 2 cups of white rice instead of noodles, and added more veggies, a little onion, parsley, basil, rosemary, onion powder, fresh garlic, and ginger powder. It was a delightful meal for a somber, rainy day. Will make again!

Absolutely wonderful! Everyone had multiple helpings, and I will definitely make this again! **Tip** It helps to marinate the beef strips in wine overnight (or at least a few hours) to make the meat not so tough.

Pumpkin Pancakes

Absolutely delicious! The syrup could use a little cornstarch to thicken, but it is a MUST HAVE with the pancakes. They are fantastic with a little powdered sugar on top, and maybe some applesauce. Will definitely make again!

Deep Chocolate Raspberry Cake

This was a fantastic, rich, gooey cake that had every chocolate lover happy. I made this cake for a friend's birthday and now everyone wants me to make their cakes from now on. Thanks for the recipe! DELICIOUS! **If you don't like dark chocolate, I would suggest using more of the semi-sweet to milk-chocolate squares instead. It was a little too rich for me, but everyone else loved it. Also, I used buttercream frosting instead of the frosting listed. It gave me more room for creativity and evened out the bitterness in the chocolate. For the raspberry filling, I cooked it with raspberry liquor, doubled the raspberries, raspberry preserves (seedless), and a little cornstarch to make it more of a gel. I filled the cake and then used the rest for the the top.

Persimmon Cookies I

Simple, delicious, and just the perfect amount of spice. I used pecans instead of walnuts, and they were finally chopped. My fiance ended up eating 5, and he doesn't like persimmon cookies! :-) A must have recipe for traditional holiday recipes!
