About this Cook
My and I husband fish every chance we get. He got me hooked on fishing in 2006. I love preparing a fresh catch! My roots are in the South. I love adding a gourmet twist to southern comfort foods and scaling them down to a batch just for two. I love to cook for crowds at holiday time. My late father and granddaddy were great cooks. But my mom and her mom taught me the basics.
My favorite things to cook
Any fresh vegetable, especially collard greens, mustard greens, turnip greens, and spinach. I love the slow cooker for pork roast, I make Carolina pulled pork BBQ with that. I've learned to saute, and replace deep frying, the food taste just as good and bread crumb crisp up in very little oil. I love to throw something together by just using what's on hand. I have a girlfriend in California who loves it when I cook at her home.
My favorite family cooking traditions
We love to eat fish on Friday. Chitterlings, a southern delicacy! I learned to clean and cook them. Pound cake has got to be the family favorite. We all love the Forth of July picnic meal. Thanksgiving and Easter are big food Holidays for me.
My cooking triumphs
I mastered the chitterlings thing without any instruction. I found myself being asked annually to make them for military base personnel stationed in my former home in California. My pulled-pork Carolina BBQ rivals my uncle's. I could probably sell that stuff.
My cooking tragedies
I can never get that cornbread with the cream corn to come out right...too wet. I stay away from too much baking. I love to use the boxed stuff. There is always a recipe in the side panel to make anyone seem like a great baker, I use those and take the applause.

Sloppy Joes II
This was great, quick and simple. I added a sprinkle of cumin and chili powder. I used ground turkey. Try this on onion rolls!

Yummy Candied Yams
I just eliminated the water. They will make thier own. Add 1/2 cup brown sugar, sprinkle with 1 teaspoon of cinnamon,a dash of nutmeg and 2 teaspoons of vanilla flavoring

Bread Pudding II
GOOOOD! I USED THE HEELS OF WHEAT BREAD. ADDED 1/4 CUP BROWN SUGAR AND CHOPPED PECANS.
