About this Cook
I'm a very busy preschool teacher, and I often don't do much cooking for myself because it's more fun for me to cook for other people. I got my love of cooking from my mom, who is the best cook in THE ENTIRE WORLD. Seriously. I also enjoy cooking with my students. This year, we made apple pie, pumpkin pie, and Norwegian waffles, and the kids had so much fun helping!

I love cooking with fresh vegetables, garlic, and olive oil. One of my favorite dishes to make is caponata
My cooking triumphs
Everyone always requests my baked brie, sangria, and pesto salmon!
My cooking tragedies
For the life of me, I cannot follow packaging directions on things like rice or couscous. It never, ever turns out!

Tomato Spinach and Basil Soup
I like thick soups, but this was a bit much. It had the consistency of a tomato sauce. I used twice as much milk as what the recipe called for; however, it never seemed to get more soup-like. The taste was okay, nothing fabulous. It was very easy to make, but I doubt I'll make it again.
