Chicken Enchiladas with Creamy Green Chile Sauce

I was wanting to make potato enchiladas, but I didn't have any type of enchilada sauce in the pantry. I quickly found this recipe and gave the sauce a try. It was so good! The only thing I did differently was add more green chile because I am a huge green chile fan and I used water with bouillon cubes because it's all I had on hand. I plan on making this again as written, I am sure it's great!

Baked Potato Pizza

BLT Dip

Basil Shrimp

Colorful Vegetable Fajitas

I thought I would miss the meat in the one, but it was amazing! I liked it better than ones with meat! I added zucchini to mine because I always have it on hand, and loved it. You just have to try it! Green chiles are also good mixed in.

Best Tuna Melt (New Jersey Diner Style)

These are addictive and soo easy. I find myself making them all the time. I put my bread in the toaster while the broiler is heating up. I find that it's an easier method for crisp bread.

Zucchini and Eggs

Was looking for something different for breakfast when I found this recipe and it was great! I added some garlic salt and powder while cooking the zucchini to give it a little more flavor. I also used more eggs than called for (I wanted zucchini in my eggs, not eggs in my zucchini) and then sprinkled on some cheese at the end.

Chicken and Broccoli Braid

This recipe was pretty good. I used onion flakes instead of onion, and green peppers. I used frozen broccoli thawed in the microwave and it worked well. I also halved the recipe for just my husband and I, and it made plenty. I will make this again, but without the almonds. I am an almond lover but I thought it just had too many textures going on.

Onion, Garlic, Cheese Bread

This bread was good, my husband loved it. I used half onion powder ad have garlic powder, added a little fresh garlic and used less onion flakes. I also sprinkled cheese on the top while it was baking. I have a 2 pound bread machine and it came out the perfect size. So it made more than the 1 1/2 loaf it was supposed to. Any bigger and it would have overflowed.

Delicious Black Bean Burritos

Very Yummy. My husband was very skeptical when he saw it, but I even got the thumbs up from him. I didn't have any jalapeno peppers on hand, so I used some diced green chiles instead. Will be making again.

Hamburger Potato Casserole

Spinach Whole Wheat Quesadillas

Red Garlic Mashed Potatoes

Garlic Chicken Fried Chicken

I loved the taste of this chicken. As suggested by another reviewer, I soaked it in buttermilk for a few hours. I baked this after browning it on both sides in the pan. I had problems with the breading not sticking to the chicken. Next time I will try dipping in dry ingredients, then wet, and then dry again.

Almond-Crusted Tilapia

I didn't have lemon pepper or garlic pepper on hand, so I used lemon juice, garlic powder and a little pepper instead. It turned out wonderful! I will definitely be making again!

Pizza Casserole

Yummy recipe. I have tried other pizza casserole recipes from this site and this is the best so far. I did add red pepper flakes and some garlic salt to give it a little more flavor.
