About this Cook
I taught myself to cook and do pretty well. I started cooking young because no one else in my family was a vegetarian, so I cooked for myself. It started very simply but now I won't buy anything pre-made. Everything is fresh and delicious.
My favorite things to cook
Vegetable Teriyaki stir fry, garlic parmesan roasted potatoes, soups, rice dishes, bread

Vegetable Shepherd's Pie
Goodness, this is delicious! I didn't follow the recipe exactly; I made the following changes: Mashed potatoes with 1/4 red onion, 1 large clove garlic, 1 T butter, 1 T oregano, 1/2 t. basil; 1 fresh zucchini, 3/4 red onion, 2 carrots, 1 c frozen edamame, 1/4 c peas, 1/2 can of corn, 1/2 can of green beans, 8 oz tomato sauce, 1 can of kidney beans. Definitely don't leave out the cheddar cheese on top. This was REALLY delicious; I can't stress that enough!! I baked this concoction at 375 for 20 min.

Spanish Rice II
Very good recipe. I added garlic, cumin, and a little cayenne pepper. I still felt this recipe was lacking something though...

Guacamole
This really is a great recipe. I use more garlic and only 2 tbsp of cilantro. Yum!
