Easy Cajun Jambalaya
Mmmmmmmm! This is pretty darn satisfying. I held to the recipe pretty closely except I used Italian sausage instead of kielbasa and added shrimp too. I recommend it.

Wild Rice and Beef Casserole
This is a good filling recipe but it is just a bit dry. I used an extra cup of chicken broth for the rice and added a can of cream of celery soup and a can of water. That helped the dryness but the ingredients still needed something to tie them all together. I solved the problem temporarily with ketchup, something my neice strongly approves of:)

Chicken and Corn Chili
This is a good recipe that I made a little better by adding some sweet italian turkey sausage and almost twice as much corn. I also used salsa from a Mexican restaurant that makes it fresh every day. Wow, what a difference. Served over yellow rice and with a little garlic brad for dipping it was a hit. I'll make this one again and again!
