My Boyfriend & I at Liberty Island, NY August 2008
About this Cook
I am a very silly, smiley, and happy person. I love giving and having a good time with those I love.
My favorite things to cook
Thai chicken pasta with sugarsnap peas. But I love cooking anything that my boyfriend loves.
My cooking triumphs
Homemade chicken pot pie, and making really fluffy pancakes :)
My cooking tragedies
The first time I tried to make rice Krispy treats...oh my...it was hilarious. You see I always try and 'one-up' the recipe by making it healthier... I used country crock rather than real butter. Never again! Now I make them perfectly though... I have learned that some things are just meant to be left as they are :)

Homemade Black Bean Veggie Burgers
These are fantastic. Never made any type of black bean burger before and I am in love. They held together perfect, I took the advice of another reviewer and dried the beans, and strained the liquid from the onion/green pepper mixture best I could. I didn't have to freeze them. My only substitution/change was 3/4 tsp garlic powder in stead of fresh garlic. ps - and they really are superb with ancho chipotle ranch! (I used T. Marzetti's low fat version found in the produce section) Enjoy!

Whole Wheat and Honey Pizza Dough
This is the perfect crust!! So delicious and very filling!!! I followed the recipe exactly. Did knead the dough a bit though, which is not mentioned in recipe ;)

White Chili II
This is so good! I've been looking for a white chili recipe and my b/f found it! He substituted 1 can cream of chicken for 1 of the cans of broth to make thicker. Used 2 48oz. jars norther beans, and forgot to put the cheese on so we just ate it without . But wow - this tastes fantastic still. If you're looking to cut the 13.9g of fat/serving forget the cheese. You won't regret it! The only thing different I want to try is to puree 4 cups of beans and see how that goes (I like a thick chili).
