Chocolate Chocolate Chip Cake Cookies

These cookies are my husband's all time favorite!! They are moist and rich and loaded with flavor. I have tried several variations on these cookies-- I have made them as directed with nuts and semi-sweet chips... very yummy :). I have also made them using bakers chocolate, broken up into bits or very dark chocolate morsels (try Ghirardelli 60% cacao morsels)... my personal favorite. For Christmas this year, I am trying this recipe with Andes Mint chips... very excited and optimistic!! Note: The dough is very thick... I would not recommend trying to make a double batch-- it's very hard to mix.

Brigid's Blackberry Pie

This is an excellent blackberry pie recipe. I used fresh blackberries picked from my family's property and was able to make four pies. Easy to make and wonderfully refreshing with a scoop of French vanilla ice cream!

Whipped Cream

Excellent- so easy to make... instead of a whisk, I used my electric hand mixer and its whisk attachment. This recipe puts those fake "whipped topping" products to shame! You just can't beat the freshness of homemade whipped cream!

Mrs. Sigg's Fresh Pumpkin Pie

This was a fantastic recipe! I doubled the recipe and the pies were gone in no time at all. Excellent with fresh whipped cream! This is my new favorite pie recipe!

Bread Machine Bagels

This is the greatest bagel recipe! I have made some alterations for various mix-ins... I have added rosemary and black olives, adding a little more salt for one kind, and for another added more sugar, almost 1/3 cup and topped with asiago cheese to make the sweet/salty contrast. The bread machine makes it so easy and fun! I also skip the egg wash and bake mine on a stoneware pan, which yields a bit crispier of a crust.

Aussie Chicken

This is my all time favorite chicken dish... true it may not be the healthiest, but it sure is the tastiest! I always go light on the onion flakes and hold the mushrooms, and I use the sauce in different variations on everything. This dish is fantastic served over brown rice with extra sauce. I really think that it's the sauce that makes the dish.

Cranberry Nut Bagels

Bagels were a little bland... the only thing that gave flavor was the cinnanon-sugar topping. I liked the texture with the oatmeal, but I think I may try tweaking recipe next time.
