About this Cook
I'm a landscape designer (architect) by profession, but my heart is really in my own backyard and my kitchen! I just got married in October '07, so I'm getting used to cooking for a husband, which is nice! I've been using this website as a recipe resource for a few years now, but have finally decided to become a member so I can add in my 2 cents every now and then.
My favorite things to cook
I think I could have been a decent pastry chef, if I had decided to pursue that career field... I have unusual patience and interest in spending waaaaaaaay too much time on those tedious dessert dishes. However, I also love creating many colorful, fresh Mexican dishes and experimenting with chicken.
My favorite family cooking traditions
My dad's side of the family is Norwegian, and my mom's side is from the island of Malta. I love trying new foods and attempting to cook dishes that come from my family's ethnic backgrounds. I am now also married to a wonderful Ukranian guy... so I get to learn all about Eastern European cuisine! He's also a soup fanatic, so I'm learning soup basics as well.
My cooking triumphs
My most interesting meal was probably as a student studying abroad in Sweden... and I (along with my other American friend/roommate) prepared a traditional Thanksgiving dinner for some of our Swedish & German friends/family. It went over very well, once I figured out the Swedish word for "turkey" (my first attempt to buy one, ended in the purchase of a duck!) We had to substitute Sweet Potato Pie for the traditional Pumpkin - because we couldn't find any pumpkin at the grocery - but all together, it was one of the most memorable Thanksgiving's I've ever had!
My cooking tragedies
Hmmm... I've had more than my share of these, although I've tried to block them from memory.... most were usually leaving something in the oven for just "a couple more minutes" and getting sidetracked for about twenty!

Trini Mango Cheesecake
I made only the Mango Topping with a separate cheesecake recipe. The topping was quite tasty, but a tad on the watery side. If I make this again, I will definitely cut down on the liquid measurement or possibly add more cornstarch to further thicken. It got rave reviews from all the happy tasters though! Thanks for the recipe!

White Chocolate Raspberry Cheesecake
This was an outstanding cheesecake! I did alter a bit, by using regular graham cracker crumbs and omitting the whole raspberry part of the recipe. I needed a good basic cheesecake recipe - the melted white chocolate was a nice twist on the same 'ole NY Cheesecake. This was my second cheesecake I've ever made (the first one was morbidly over-baked)... I followed the directions of many others by using a waterbath, only baking an hour & then leaving it in the oven to cool for an hour or two and it came out terrific!! Many compliments from all who tried it! I mixed it up by topping with a homemade mango topping in the recipe for 'Trini Mango Cheesecake.' Delish!! Thanks so much for the recipe! (I'll be sure to eventually bake the original recipe someday...)

Honey Glazed Ham
This recipe was FANTASTIC! I read through some of the reviews and thought since I was taking this to a friends for Easter, I might try baking in an oven bag. Having never used them before, I just bought a box and didn't think much of it. A word of advice on the oven bags - make sure yours do not contain VENT HOLES... Let's just say it was not my brightest moment when I tried "flipping" the ham. Luckily, the glaze stayed inside the pan, even though it eventually seeped out of the bag through those pesky vent holes. Next time I will try it in my crockpot. Tastewise - this ham was EXCELLENT! We had a crowd of about 15 people for Easter who said they loved the clove flavor. I was surprised how much it actually permeated through the ham. We used a half-ham - not presliced. I didn't even score the ham, but the flavor really seeped into the meat. A winner and a keeper!! Thanks for the recipe. :)
