Thanksgiving Leftover Casserole

Quick Tuna Casserole

This was super fast and pretty tasty. I put crushed potato chips on top and it really needed the salt. Will make again, but will add some seasonings.

Butter-Dipped Biscuit Squares

These are great! I was looking for a fast, easy, no egg biscuit recipe. I didn't even care if they tasted so-so- just going to sop up stew, but I got everything I was looking for and so much more! These biscuits are all those things, plus delicious -my family went nuts for them! Will make again and again! Thanks!

This was good. I added carrots too. Next time I may add some red pepper flakes for a kick. It is a good basic recipe that allows for lots of customizing.

Chocolate Cheesecake III

This came out really well and was very easy to make. Warning: This is an extremely rich dessert! Serve small slices! I served average sized slices and no one could finish b/c it was too rich. It was so sad to see that cake go into the trash!

Spaghetti Pizza Lasagna

This was a nice change from simple spaghetti. My daughter, who hates spaghetti, ate this with no complaints! I just excluded the pepperoni due to personal taste and used angel hair instead of thicker spaghetti.

Enchilada Casserole II

This was quick and easy, but taste was only okay for me. As others did, I used corn tortillas and added corn. It was still missing something though. I'll try it again, but I think I'll add chilis, diced tomatoes or beans.

Fried Plantains

These were yummy. I used very ripe plantains and instead of all oil, I used about 1 tbsp of butter and 2 of oil - it was plenty. Topped with a little sugar -kids gobbled up!
