Carnation® Swedish Meatballs

Made my own meatballs, but started off with their sauce recipe. Had to make some additions: 1 Tbls. Wocestershire sauce, 1 tsp. garlic salt, and 1 Tbls. parsley. Substituted 1/4 tsp. ground nutmeg for the dill (nutmeg is the original flavor of Swedish Meatballs). I also added 8 oz. fresh sliced mushrooms. It was very good with the changes.

Fortune Cookies I

Had to make changes...Combine 1/4 cup flour, 3 Tbls. sugar, and 1 pinch salt; set aside. Whisk together 1 egg white, 1/2 tsp. vanilla, and 1/2 tsp. almond extract. Whisk in 2 Tbls. melted butter. Sift dry mixture into egg mixture and stir to mix. Continue as per original recipe BUT keep in mind: your first 2-4 are going to look aweful. You'll probably need to double the recipe to get enough.

Oven Kalua Pork

Rather plain tasting. We scored the meat and rubbed in the salt and liquid smoke, then "marinaded" overnight in the foil. When we baked it, we put some water into the bottom of the pan so the meat wouldn't dry out. The meat was tender, but there seemed to be no flavor in the meat. So, we took the remaining juices from the pan, added some more liquid smoke, and poured it over the pulled meat.

Hawaiian Chicken Kabobs

Had to double the marinade, not enough. I used only 1/2 the chicken, but added chunked pineapple and whole waterchestnuts to the kebabs. Very good and very easy.

Asian Coleslaw

Made dressing as per directions (with chunky peanut butter). For the veggies, I just used a 1 lb. bag of cole slaw mix, the cilantro, and the green onion. Very good, but next time I will add more onion (couldn't taste it) and some chopped peanuts for crunch.

Marinated Pork Strips

I give this 5 stars for inspiration. The dinner I made from this won rave reviews. I made the marinade as per the instructions, except used sesame oil instead of vegetable oil and green onions instead of regular. Sliced the pork to 1/2" thick slices and laid out, slightly overlapping in square baking dish. Marinated it overnight, then drained off marinade into saucepan. Baked as per instructions. In the meantime, made brown rice and added a bag of frozen stir-fry veggies the last 5 minutes of cooking. Spread rice/veggies on plate and laid slices of pork over top. Served with boiled marinade in small condiment dishes on the side. Superb!

Cream of Mushroom Soup I

Same ingredients, different method, turned out great. Used the required amount of butter to saute the mushrooms and onions in. Added broth. Pureed only half that mixture with required amount of flour plus whole fresh parsley and thyme. Returned to pot with cream, salt, pepper, and only 1 tsp. sherry. Only thing I'd change is to use heavy cream instead of half and half.

Pumpkin Pancakes

Tasted like pumpkin pancakes should (I guess). A bit heavy - I added more milk after the first batch, but still doughy vs. light nd airy. Used pumpkin pie spice instead of the various spices listed in the recipe.

Quick and Easy Tuna Casserole

I used ingredients I had on hand: 1 cream of mushroom and 1 cream of celery, canned peas, rigatoni pasta, and 1 cup shredded cheddar, along with remaining listed ingredients. It was still pretty good, but could have used some celery salt, garlic powder, and a pinch of ground mustard.

Coconut Ambrosia Salad

Added a box of instant pistachio pudding, as others suggested. That helped. However, way too much whipped cream stuff and not enough fruit. Made it nearly tasteless. I added more pineapple (used an entire 15 oz. can) and a can of apricots, diced (that's all I had in the cabinet). I wasn't keen about it, but people at the barbeque seemed to like it and some even had seconds.

Mostaccioli with Spinach and Feta

This meal was boring and tasteless. Had I known sooner, I would have been prepared with some basil pesto and plenty of Parmesan cheese to liven it up with. Also, the addition of 1 Tbls. garlic salt would be an improvement.

Bahama Mama I

Anytime I go out for a drink, I order Bahama Mamas. I am also a bartender. Coffee-flavored liqueur IS NOT in any Bahama Mama I've ever had. Try using light rum (or 151), coconut rum, banana liqueur, orange juice, pineapple juice, and grenadine.

We used left-over mashed potatoes from Christmas dinner for this recipe. They had a very pasty consistency and a sweet taste that didn't seem right, so next time, we will omit the flour, 1 egg, and the corn syrup.

Skillet Chicken Cordon Bleu

Very tasty and easy. Just needs more sauce if you're serving over noodles or rice. Not enough to coat plateful of egg noodles. Otherwise - simple, filling, and delicious.
