Absolute Best Pancake Syrup

This was awesome! Skipped the corn syrup and used 1/2 white sugar & 1/2 brown sugar. Made before the pancakes so it had time to cool and thicken. Everyone loved it (and kept sticking fingers into the pan to sneak tastes).

Spiced Sweet Roasted Red Pepper Hummus

I merged this recipe with "Hummus III" and it was fantastic! Basically, the changes made were to increase the tahini to 3 Tbls., add 2 tsp. olive oil, and increase salt to 1/2 tsp. Awesome!

Sweet Potato Pie II

We smoke this pie in our smoker, at about 275, until the center sets. It is AWESOME! When smoked, it tastes like toasted marshmallows on the top of the pie. Wouldn't change a thing!

Flourless Chocolate Cake I

I lost the recipe for flourless chocolate cake I'd used before, so I made this. The flavor is great - I drizzled with a raspberry sauce. However, even following the directions exactly, I still ended up with some tiny bits of cooked egg, which ruins the silky texture. My other recipe had you temper the chocolate mixture with the egg mixture to avoid this.

Cream Corn Like No Other

They were tasty, but too rich. Perhaps they would be suitable for a party, where any one person may only eat one or two, but you really can't eat more than that.

Chicken Chilaquiles

This one's a keeper! Used Queso Quesadilla Cheese (triple redundancy) and mixed it right into the sour cream and enchilada sauce mixture, then layered it with the rest of the ingredients. Didn't need any other tweaking, not even salt! P.S. No need to thaw the corn first. WE LOVED THIS DISH!

Edible, but won't make again. Followed the recipe almost exactly (omitted the tomatoes, added a shallot and a few more spices at the end). Very one-dimensional in flavor. The wine is overpowering in the meat; perhaps rubbing it with a mixture of the mustard, W. sauce, Italian seasoning, and lemon juice would have been better as a marinade. I found myself scrambling at the end to add some seasonings to save the dish from complete boredom. Luckily, the Asiago helped a lot, but the recipe shouldn't have relied on the cheese to "make" it.

Shrimp and Crab Bisque

With minor changes, perfect! I used 1/4 cup cream sherry and 1/4 cup water to make up for the 1/4 cup I left out, as well as 1/2 tsp. Old Bay seasoning. I also added 1 stalk celery, sauteed; don't do this, as it added crunchy bits that took away from the overall creamy texture. Loved the soup! Only makes 2 servings, though.

Sherry Bundt Cake

Followed recipe almost exactly, only omitting half the nutmeg and adding 3/4 cup chopped pecans. The cake was good. Though I enjoyed the sugar/cinnamon/cocoa topping, I would have preferred a glaze.

Tangy Slow Cooker Pork Roast

Was it tangy? Yes. Did the meat fall apart? Definitely. Would I make it again? No. I followed the recipe exactly. The meat was certainly edible, but all we could taste was vinegar and sugar. The sauce was watery and pungent. We slathered barbecue sauce over the meat to make it taste better. With all the positive reviews, I thought it would be better. My bad.

Awesome Slow Cooker Pot Roast

Great recipe. 4 stars only because the gravy was thin (added flour at the end). I also added a quartered onion and sliced celery at the beginning and some baby carrots for the last hour of cooking. Will make again.

Gourmet Mushroom Risotto

First time making risotto. Great results, but a lot of work. May opt for a baked pilaf instead; similar flavor, less work. Also, save money on the portabellas and just use white mushrooms.

Zucchini Brownies

I was skeptical when a friend suggested the recipe, but the end result was fantastic! They are chewy and fudgy - everything you want from a brownie and more (less calories, get to use up garden zucchini)! I omitted the walnuts and added peanut butter morsels.

Homemade Vanilla Pudding

I altered the recipe a bit, but my main complaint is that it was too sweet to eat (and I like sweets). I did not change the amount of sugar, but would cut it in half if I made this again. I did use only 2 Tbls. cornstarch, but added 1 egg yolk for thickening, richness, and color. I also added 1/2 tsp. cinnamon and a dash of nutmeg. The flavor and consistency was great, just way too sweet.

Chocolate Ganache Icing

This was good. I used it to ice a dark chocolate cake. I used Kahlua instead of brandy. The directions are easier than a "gourmet" recipe, but it did the job. Maybe a little too bitter for me...

Best Ever Caramel Apple Crisp

I may not make it again, but it was good. Our "large apples" must have been bigger than the author's, because we had to use a 13"x9"x2" pan. There was no "Crisp" because of the caramel (we used a tub of fat-free caramel apple dip). If I made it again, I'd add more spice (apple pie spice) to the apples and layer the caramel below the crisp. I would use the caramel apple dip again, though. Oh, and the tip to line the pan with foil to avoid a messy clean-up is a good one!

Chicken Tikka Masala

Great recipe - TOO MUCH SALT! Reduce the salt at least by half in both the marinade and sauce. We are making this for the fourth time, so needless to say, it's a great recipe with that small change.

Pork Sausage and Cabbage Pitas

My whole family loved this! 4 stars because I personally think it needed tweeking: I used a 1 lb. tube of regular Jimmy Dean sausage, then 1 small head of cabbage, 2 small onions, and instead of the sugar, red pepper, and salt, I used seasoned salt to taste. I ended up using 1/2 cup sour cream. We will make again.

Sugar Cream Pie I

My husband made this for me and we both loved it, though I though it was a bit too sweet. Next time, we'll add only 2/3 cup sugar. We didnt have half-and-half cream, so we used half heavy cream and half milk (which is what half-and-half is anyway). I'd eat the filling as a pudding by itself if I could! As for the 1-star rating below, if you cook a mixture with corn starch too long or over too high heat, the thickening agents will no longer work.
