Made a half batch of this recipe (Used 2 eggs) and they came out great! This is really a whisk opportunity as opposed to the instructed "using a wooden spoon or fork to blend". I don't know about over stirring but the whisk gets the batter nice and smooth with very few lumps.
I know everyone loves their short stack but I prefer silver dollars for ease and convenience. These actually cooked faster than my usual dry mix and I was pretty busy poring and flipping. I might try a lower heat next time (was just under medium). Just remember bursting bubbles is your pancake's way of saying "Flip me!"
