Silver Dollar Buttermilk Pancakes II
About this Cook
I found all recipes a couple of years ago and finally decided to become a member. I have a son who I am raising and I look forward to teaching him some of my favorite recipes and how to go with your instincts in the kitchen.
My favorite things to cook
Pizza. I was giddy and excited for weeks after I was able to finally get the 16" deep dish (cake pan) that I now use to make Chicago style deep dish pizzas. I also love anything Italian. My favorites are baked ziti or spaghetti, lasagna , shrimp fettuccine Alfredo Florentine. I also make a mean meatball sub. I also love breakfast foods and grilling on charcoal during the summer. I am experimenting with indian dishes and curries.
My favorite family cooking traditions
In my family we have a traditional recipe of cornmeal gravy. I might post it later.

Creamed Chipped Beef On Toast
This is a great crowd pleaser. I used a 6 oz package of Land-O-Frost Cracked Black Pepper Beef and doubled the gravy. I used the deli beef because the package was about 2 times as much volume as a regular jar of dried beef (for the same price). I avoided most of the salt and saved some money at the grocery store. I can't wait to try other beef packages.

Buttermilk Pancakes II
Made a half batch of this recipe (Used 2 eggs) and they came out great! This is really a whisk opportunity as opposed to the instructed "using a wooden spoon or fork to blend". I don't know about over stirring but the whisk gets the batter nice and smooth with very few lumps. I know everyone loves their short stack but I prefer silver dollars for ease and convenience. These actually cooked faster than my usual dry mix and I was pretty busy poring and flipping. I might try a lower heat next time (was just under medium). Just remember bursting bubbles is your pancake's way of saying "Flip me!"
