About this Cook
I am a 50 year old married woman with no children. I have a small mosaic business and just "retired" after 32 years in corporate America.
My favorite things to cook
We love rib roasts and roast chicken with lots of rosemary....we load up the meat rack with stems of fresh rosemary and cook low and slow to let the aroma waft through the house. A simple green salad or green vegetable to accompany the wonderful meat is all we need. I love fresh, homemade soups in the winter. I just purchased a 7 quart Circulon pot that makes everything cook better and taste wonderful.
My favorite family cooking traditions
My family is gone but I have fond memories of my mother's Irish Soda Bread. I still have her handwritten recipe but have only had the nerve to attempt it once in the past five years. I plan to make some this year for the holidays. My mother always cooked for an army and welcomed anyone and everyone to her holiday table. She set a lovely table for the buffet with Irish linens and her good flatware and china even though we had people sitting all over the room. People came year after year as they knew it was going to be a good time and elegantly done. We have some wonderful memories of past holidays. I will still run into people that had been to her feasts and they'll tell me they think of my mother often. I think she had the right idea....mix it up and serve good food....and drink!! Everyone was as "welcome as the flowers in May...."
My cooking triumphs
I make my own peanut butter - I devised the recipe myself and will enclose a recipe card with each decorated jar. They always ask for more!! My husband loved my dinner tonight...we had dinner at Olive Garden earlier in the week and I said I was going to try their meatball soup. I used Italian Chicken sausage from the butcher (4 links), Russet potatoes (2 med size, sliced), half a bunch of chopped cale and Italian seasoning. I used canned chicken broth (Swanson's) - two large cans. I cooked it for three hours on low and turned the heat up just before serving. I grated Asiago cheese on top....and....one last bit of flavor was a pat of rosemary butter. My husband said it was the best soup he has ever tasted.
My cooking tragedies
I tossed out some spaghetti sauce just the other night. The meat was tough and the sauce had a bite. I think I cooked it too long and then we put it in the fridge overnight so the flavors would blend...OMG, it was horrible. We went out to dinner that night.
