About this Cook
I'm now a mom! of a sweet little boy named Carson and wife to Ross. Both are picky eaters so far and I'm trying desperately to impart my love of new food adventures to my son while fighting my husband's genes and way of thinking. I look at new foods and think "this could potentially be my most favorite thing to eat!!"
My favorite things to cook
Anything my family loves to eat up! I make some mean chicken flautas (so easy!) and pretty much anything sweet. I LOVE to bake - the measuring and calculations feeds my love of math (said the accountant) while giving me a creative tool. But, for me, my "cooking with love" has everything to do with a calorie-conscience way of thinking. Give the people what they want without the calories or fat!
My favorite family cooking traditions
Ummm.... my mom hardly EVER served a vegetable without first frying up some bacon for that vegetable to fry in! We are Southern - in food, language and tradition. I want the rib-sticking meals without the butt sticking fat, so that's my every-single-night mission. My men want their good ol' food or else. I - HELLO! - freaking love casseroles and any meat cooked low and slow. The more cheese involved the better (but I make it low-fat and don't miss a thing).
My cooking triumphs
I host all family functions right here out of my little kitchen. And by family I mean my in-laws, my sister's in-laws, some close friends and anyone that has no where to go for said occasion. I love to feed people and bring them a little "yum experience."
My cooking tragedies
Well, sometimes things burn! My first southern HM biscuits were black on the bottom = heart break! Such good ingredients, love and time and a very poor product just almost physically hurts, but my awesome dad ate them up like a good guy which really softens the blow. I have GREAT people! I mean they were BURNed.
