Chocolate Chip Mini-Muffins
My 12-yr-old daughter made these and found the recipe fun and easy. However, when she bit into the muffin, she found it too filled with air...not "cakey" enough in texture. We did substitute margarine for shortening, so this might account for the slightly drier texture. But, we used good-quality chocolate chips, so that helped boost the taste and will ensure they all get eaten!

Mock Champagne
Nice, clean taste, but it didn't receive any rave reviews at a recent baby shower. Didn't see anyone go back for seconds. Not that it tasted bad, by any means, it just didn't have much "punch."

Peppermint Patty Brownies
These were a huge hit at a recent baby shower, even the husbands who dropped by later couldn't resist. Great chocolatey taste that is not overpowered by the mint. The fact that the chocolate around the mint melts into the brownie, but the mint layer remains whole makes for a lovely appearance. Slice in squares then into triangles to show the peppermint. Made these two days before the shower and they stayed lovely and fresh.
